Fish with celery and orange sauce
Ingredients: 1 kg fish, 350 g celery cut into sticks/julienne, 150 g carrot cut into sticks, 3 small onions (or one large) finely chopped, 4 tablespoons oil, 1 orange, zest and juice, salt, pepper, spices for fish
To prepare a delicious fish with orange sauce, we start by seasoning the fish with salt, pepper, lemon juice, and a special spice blend designed for fish. This blend will add a savory flavor, highlighting the fresh taste of the fish. After evenly seasoning, we cover it with plastic wrap and let it chill for about 30 minutes. This step is essential as it allows the spices to penetrate the meat well, giving it a special taste.
In a pan, we add two tablespoons of oil and, over low heat, add finely chopped onion, celery, and carrot. These vegetables will add a flavorful base to our dish. We sauté them for 3-4 minutes, stirring occasionally, until they become slightly soft and the flavors combine. After this interval, we pour in between 150 and 200 ml of water or vegetable broth, then cover the pan with a lid. We let it simmer on low heat for 10-15 minutes so that the vegetables cook evenly and release their flavor.
Meanwhile, we take care of the orange. We wash it well to remove any impurities from the peel. Then, using a small grater, we grate its peel, being careful not to touch the white part, which is bitter. We squeeze the juice of the orange and put it in a bowl. We add the remaining oil, salt, and pepper, then pour in 150 ml of water. We mix all the ingredients well until we obtain a homogeneous mixture, which will serve as a sauce for the fish.
In an oven-safe dish, we place the vegetable mixture, then place the fish on top. We pour the orange sauce over the fish, making sure it is well covered. We preheat the oven to a medium temperature and place the dish inside. We let it bake for 25-30 minutes, until the fish becomes golden and beautiful, and the flavors blend perfectly. It is important to check occasionally to ensure the fish does not dry out.
