Smoked Salmon Paste in `janet` Baskets

 Ingredients: sesame and poppy seed baskets ready-made/baked* 400 g smoked salmon (boneless) 100 g vegetable margarine salt (if necessary) and pepper to taste 100-150 g roasted and ground walnuts juice from half a lemon (more if you like) olives for decoration

To create a delicious recipe for salmon paste cups, I will start with the dough for the cups. I will use a simple yet effective recipe. For this, mix 250 g of flour, 100 ml of water, 50 ml of olive oil, and a pinch of salt. Knead the dough well until it becomes elastic and smooth. Once you have the dough, let it rest for 30 minutes, covered with a damp towel. Now, if you want to achieve perfect cups, roll out the dough using a noodle machine so that you get a very thin sheet. Using a glass of water, cut circles from the dough, which you will place in mini muffin tins. Make sure the dough is well pressed against the edges of the mold to prevent leaks.

After filling all the molds, bake them in a preheated oven at 180 degrees Celsius for 15-20 minutes or until they become golden and crispy. Once you take them out of the oven, allow them to cool completely, then move on to preparing the salmon paste. Choose a quality smoked salmon fillet, remove the skin, and gently crumble it with your hands. Place the salmon in a blender along with freshly ground pepper, the juice of one lemon, and vegetable margarine, preferably one that is not hydrogenated, containing flaxseed and soybean oil. Blend gradually, adding olive oil until you obtain a creamy and homogeneous paste.

After obtaining the salmon paste, transfer it to another bowl and add roasted and ground walnuts, mixing well to integrate the flavors. Taste the mixture and adjust with pepper, being careful not to add salt, as the smoked salmon is already quite salty. Now, it's time to fill the cups with the salmon paste, being careful to fill them generously but without overflowing.

For an appetizing look, decorate each cup with olives stuffed with spicy peppers, which not only adds a contrast of colors but also a hint of spicy flavor. These sesame and poppy seed cups, combined with the refined salmon and roasted walnut paste, are perfect as appetizers. I am confident they will become a hit on the Easter table, adding a touch of elegance and flavor to the celebration.
