Hearty Breakfast
Although it is said that breakfast should be a solitary meal, lunch should be shared with a friend, and dinner should be offered to an enemy, this breakfast recipe is so delicious and abundant that it deserves to be enjoyed with loved ones. Preparing this dish will become a true pleasure, perfect for starting the day with a smile.
We start by gathering all the necessary ingredients: fresh mushrooms, sweet cream, half an onion (or shallot), the best quality butter, oil, dried thyme, salt, white pepper, and of course, a bottle of cognac. It is important to prepare all the ingredients in advance to make the cooking process as enjoyable as possible.
Slice the mushrooms thinly or, if using champignon, into quarters. Heat a generous tablespoon of butter in a large skillet and add the mushrooms. They will absorb the butter, giving them a rich and creamy flavor. If you prefer, you can add a tablespoon of oil to prevent the butter from burning, but I prefer to let the butter shine in all its glory.
While the mushrooms are sautéing, finely chop the shallot and add it to the skillet. Stir occasionally, and when the mushrooms have released all their juices, it is time to add a splash of cognac. This will give the dish a special flavor, but make sure the alcohol evaporates completely.
After adding the cream, let it simmer for just a few minutes until the sauce thickens. The secret is not to cook it too long, so you maintain the creamy texture.
While the sauce finishes, prepare the "bread in pajamas." Beat the three eggs with half a liter of milk and dip the slices of bread in this mixture. Fry them over high heat until golden on both sides. These slices will be the perfect base for the delicious mushroom topping.
Place the toasted bread slices on plates and generously cover them with the aromatic mushroom mixture. You can sprinkle fresh thyme or green parsley on top for an extra touch of freshness. For a hint of spice, add a few drops of Tabasco sauce or, if you prefer, you can use fresh tomatoes, peppers, or other vegetables, drizzled with a little balsamic vinegar to add a note of acidity.
