This simple and effective recipe will transform your fresh cucumbers into unmistakable side dishes, perfect for accompanying roasts or salads.
Preparation time: 30 minutes
Fermentation time: 3-4 weeks
Number of servings: 10 jars of 5 liters
Ingredients:
- 10 kg cucumbers (choose the youngest and crunchiest ones)
- 2 cleaned horseradish roots
- 2 hot peppers (or more, to taste)
- 2-3 garlic cloves (optional, more for garlic lovers)
- Celery leaves (about 10 leaves)
- Dill leaves (about 10 leaves)
- Cherry leaves (about 10 leaves)
- 2 packs of Spicy Fix (a special seasoning for pickles)
- 3.5 liters of water
- Vinegar (600 ml for 3.5 liters of water)
Preparing the ingredients:
1. Start by washing the cucumbers thoroughly under a stream of cold water. Make sure to clean them well of any impurities. After washing, let them drain completely.
2. Wash the celery, dill, and cherry leaves as well, allowing them to drain well.
3. Peel the garlic and horseradish, then cut the horseradish into thin strips. You can leave a few whole garlic cloves if you prefer a more intense flavor.
Preparing the jars:
1. Ensure that the jars are washed and dried before you start assembling. It is important that the jars are clean to prevent unwanted fermentation.
2. Place a few cherry, dill, and celery leaves at the bottom of each jar. Add a few strips of horseradish and a few garlic cloves.
3. Start placing the cucumbers in the jar, packing them tightly to avoid leaving empty spaces. On the sides of the jar, add the hot peppers and slices of horseradish for extra flavor.
Preparing the brine:
1. In a large pot, combine water, vinegar, and the two packs of Spicy Fix. Put the mixture on the heat and let it boil for 5 minutes, stirring continuously. This step will help activate the spices and enhance the flavors.
2. After boiling, taste the brine. If necessary, you can add a bit more salt or vinegar, depending on your acidity preferences.
Finalizing the pickles:
1. Once the brine is ready, pour it hot over the cucumbers, making sure to cover them completely.
2. Seal the jars with airtight lids. These pickles do not require additional sterilization, making them quick and convenient.
3. Prepare a box lined with blankets or towels, where you will place the jars. Cover them well to cool slowly.
Storage:
1. Leave the covered jars to cool completely in the box. Once cooled, store them in a dark and cool place, such as a pantry or cellar.
2. You will enjoy these spicy pickled cucumbers throughout the winter, adding extra flavor to your meals.
Nutritional benefits:
Cucumbers are an excellent source of water, vitamins, and minerals. The pickling process is also beneficial for the digestive system due to the probiotics that develop during fermentation. Horseradish adds extra antioxidants, while garlic is known for its antibacterial properties.
Serving suggestions:
Spicy pickled cucumbers are delicious alongside roasts, in sandwiches, or even as an appetizer. You can try adding them to salads for a crunchy and spicy contrast.
Frequently asked questions:
