Ingredients: Put between 3 and 3.5 liters of water depending on the volume of vegetables and bones, but do not exceed 3/4 of the pot's capacity. 1 chicken back (with neck) 1 teaspoon of white wine vinegar 2 large carrots 1 piece of root celery 1 large onion 1 parsley 9 peppercorns 1 bay leaf 2 small crushed garlic cloves
To prepare a delicious and healthy chicken soup, we start by cleaning the vegetables. Choose fresh, quality carrots, celery, onion, and garlic. Carefully peel them, then cut them in half to allow the flavors to release more easily during cooking. It is essential to wash the chicken back well, removing excess fat to obtain a healthier and less fatty broth.
Once the vegetables and meat are ready, add all the ingredients to a pot with a capacity of at least 6 liters. Make sure to add enough water to cover everything so that the flavors combine perfectly. Also, add your favorite spices, such as peppercorns, bay leaves, thyme, or parsley, to enhance the flavor. Put the lid on the pot, seal it well, and set the pressure to maximum.
After a few minutes, when the pressure indicator has risen, reduce the flame to the minimum. Let the soup simmer for an hour, making sure to check the indicator from time to time to ensure the pressure remains constant. At the end of the 60 minutes, turn off the heat and let the pot cool naturally. It is important not to open the lid before the indicator drops to avoid any accidents.
Once the soup has cooled, strain the liquid through a fine sieve, discarding the vegetables and chicken bones. You will obtain a clear and flavorful broth, full of nutrients. Let the soup cool completely, then portion it into glass jars or airtight containers, which you can keep in the refrigerator for a few days or in the freezer for longer periods. This soup is an excellent ingredient that will enrich the taste of dishes, being a healthy alternative to store-bought products full of preservatives and additives.
