This cake is not only delicious but also a true culinary masterpiece, combining textures and flavors, making each slice a memorable experience. Let’s get started!

Instructions
Step 1: Preparing the sponge
1. Start by separating the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff peaks form and they double in volume. It’s important to use a clean bowl with no traces of fat to achieve a perfect meringue.
2. Gradually add the sugar while continuously mixing to obtain a glossy meringue.
3. Incorporate the yolks, oil, milk, and vanilla extract. Mix well until combined.
4. Sift the flour together with the baking powder and gently fold it into the mixture using a spatula to avoid losing the air from the egg whites.
Step 2: Baking the sponges
5. Prepare two baking trays: one rectangular and one small (I used a small glass dish to create the "rock"). Line the rectangular tray with parchment paper.
6. Divide the batter: pour part of it into the small dish and the rest into the large tray. If you have space in the oven, you can bake both trays simultaneously.
7. Bake at 180°C for 30-40 minutes or until a toothpick inserted comes out clean. Allow the sponges to cool completely on a wire rack.
Step 3: Preparing the strawberry mousse
8. Clean and wash the strawberries, then mash them. Add the powdered sugar and let them sit for a few minutes.
9. Whip the cream separately until it becomes firm. Fold the whipped cream into the strawberry puree.
10. Prepare the gelatin according to the package instructions and add it to the strawberry mixture. Refrigerate for 20 minutes to set.
Step 4: Preparing the chocolate mousse
11. Melt the chocolate in the microwave or over a double boiler, being careful not to burn it.
12. Mix the melted chocolate with the whipped cream and the prepared gelatin according to the instructions. Let it cool.
Step 5: Assembling the cake
13. Cut the large sponge into two equal parts. The small sponge can be cut into three pieces to create the "rock."
14. Make a syrup from the mashed strawberries, water, and sugar to taste. Soak the sponges to keep them moist and flavorful.
15. Start assembling: on the first sponge, add the strawberry mousse, then on the second, the chocolate mousse. Reserve some of each mousse to fill the small sponge.
Step 6: Decorating the cake
16. Cut the small sponge to support the doll. Fill it with the chosen mousse and place it on the cake.
17. Use the remaining whipped cream to decorate the cake. Add blue food coloring and use a spatula to create ocean waves.
18. Use a fork to create patterns on the sides of the cake, adding a touch of magic.
19. Decorate with fish-shaped gummies and sprinkle the blue sugar for a sparkling effect.
Serving and suggestions
The Mermaid Cake is perfect to be enjoyed alongside a glass of fresh fruit juice or a refreshing lemonade. You can experiment with different mousse flavors, such as raspberry or mango, to add a personal touch. The cake can also be served with vanilla ice cream, adding a pleasant contrast of temperatures and textures.
Nutritional benefits
This cake, while delicious, can be considered a special treat. Strawberries are rich in vitamin C, while dark chocolate contains beneficial antioxidants for health. By using natural cream instead of processed products, you achieve a dessert with an authentic taste, free from additives.
