To start this delicious recipe, we will focus on preparing the pastry cream, which will add a creamy and flavorful layer to our dessert. In a saucepan, we add the milk along with half of the sugar and a vanilla pod. We bring the mixture to a boil, stirring gently to prevent sticking. Meanwhile, using a food processor, we mix the eggs with the remaining sugar and a pinch of salt until the mixture becomes frothy and takes on a light color. This is the stage that will give our cream an airy texture.
Once we have a rich foam, we add the cornstarch, which will help thicken the cream. Next, we slowly pour the warm milk into the egg mixture, constantly stirring to prevent the eggs from curdling. After incorporating all the milk, we put the mixture back on the heat and stir with a whisk until the cream thickens. It is essential to be careful that it does not stick to the bottom of the saucepan. Once the cream has reached the desired consistency, we take it off the heat and let it cool.
While the pastry cream cools, we will prepare the almond cream. We beat the soft butter with the sugar until it becomes a fluffy mixture. We add the eggs, one by one, ensuring that each egg is well incorporated before adding the next. Finally, we add the almond powder, which will provide a rich flavor and fine texture. When the pastry cream has completely cooled, we incorporate it into the almond cream, thus obtaining a delicious mixture called frangipane.
Now, let's take care of the puff pastry. We cut out two circles, one measuring 26 cm and the other 27-28 cm. We brush the edge of the larger circle with beaten egg yolk mixed with a little water and fill the center with frangipane. We place the smaller circle on top and seal the edges, ensuring they are well stuck. We brush again with egg and let it rest in the refrigerator for about 20 minutes. This step will help stabilize the dough.
After the resting time has passed, we take it out of the refrigerator and brush again with egg. We can create a design on the surface of the pastry for an attractive look. We preheat the oven to 180 degrees Celsius and, once it is ready, we place the crown in to bake. We make sure to watch carefully, leaving it in the oven until it turns a nice golden brown, and the flavors blend in a delightful way.
