Ingredients
For the crust:
- 275 g digestive biscuits (or petit beurre, no added sugar)
- 100 g sugar (optional, only if the biscuits are not too sweet)
- 130 g melted butter
For the filling:
- 300 g creamy yogurt
- 300 g Mascarpone cheese
- 150 g sour cream
- 5 tablespoons sugar
- 2 teaspoons lemon juice
- 2 packets vanilla sugar
- 500 ml liquid cream
- 2 packets gelatin
- 4-5 tablespoons sugar for the cream
Fruit mixture:
- 500 g blueberries (thawed if frozen)
- 300 g cherries (pitted, also thawed)
- 5 tablespoons sugar
- 6 tablespoons water
- 3 teaspoons cornstarch
Preparing the Cheesecake
Step 1: Preparing the crust
1. Start by crushing the biscuits. You can use a food processor for a quick and efficient process. If you don’t have one, place them in a bag and crush them with a rolling pin.
2. Mix the crushed biscuits with the melted butter and sugar (if using). Make sure the mixture is well combined.
3. Line a 26 cm springform pan with this mixture, ensuring it is evenly spread in a thin layer.
4. Preheat the oven to 180 °C and bake the biscuit crust for 10 minutes. After baking, let it cool completely.
Step 2: Preparing the filling
1. In a small bowl, soak the gelatin in 6 tablespoons of cold water. Let it sit according to the package instructions.
2. In another bowl, mix the Mascarpone cheese with the sugar. Add the yogurt, sour cream, vanilla sugar, lemon juice, and mix well.
3. Melt the gelatin according to the instructions and incorporate it into the cheese mixture.
4. Whip the liquid cream with 4-5 tablespoons of sugar until it becomes firm. Start adding the whipped cream to the cheese mixture, gently folding from the bottom up to retain air.
5. Pour the cream mixture over the biscuit crust and refrigerate for at least 3 hours or until it is completely set.
Step 3: Preparing the fruit topping
1. In a small saucepan, combine the blueberries, cherries, sugar, and the 6 tablespoons of water. Bring to a boil over low heat for 5-10 minutes, stirring occasionally, until the sugar is completely dissolved.
2. Mix the cornstarch with a tablespoon of cold water and add it to the saucepan. Cook the mixture until it thickens. Let it cool completely.
Step 4: Assembling the Cheesecake
1. Once the cheesecake has set, remove it from the pan and place it on a serving platter.
2. Pour the berry mixture over the cheesecake, using a spoon to distribute it evenly.
