Chocolate Roll with Cherries
I decided to try a delicious recipe that I discovered in a culinary magazine. My husband was kind enough to translate the steps I didn't understand from Slovak, so I eagerly got to work. The first step in preparing this treat is to wash the fresh, juicy cherries and then carefully remove the pits. It is important for the cherries to be well cleaned to ensure a fine and pleasant texture for the roll.
The next step is to separate the egg yolks from the egg whites. It is essential to pay attention at this stage, as the egg whites will be beaten to a foam, and a bit of yolk in them could prevent them from rising properly. Beat the egg whites with the sugar until you achieve a firm, glossy foam that will add extra lightness to the mixture.
Meanwhile, melt the dark chocolate in a bain-marie or in the microwave, being careful not to burn it. Once melted, mix it with the egg yolks, creating a creamy and decadent mixture. Then, carefully add the beaten egg whites over the chocolate and yolk mixture, gently folding with a spatula to avoid losing the air in the egg whites. After well incorporated, add the flour and baking powder, mixing again gently.
Prepare a tray lined with parchment paper, where you will pour the obtained batter. Make sure it is evenly distributed. Place the tray in the preheated oven at 180 degrees Celsius and bake for about 15 minutes. When ready, let the base cool completely.
Meanwhile, you can prepare the filling. Beat the soft butter with the powdered sugar and vanilla sugar until you achieve a creamy consistency. It is important for the butter to be at room temperature for easy mixing. Then, add the cottage cheese and continue mixing until the ingredients are perfectly integrated. Keep a quarter of the filling for decoration, while the rest is spread evenly over the cooled base.
Sprinkle fresh cherries on top of the filling and use the parchment paper to carefully roll the cake, creating a beautiful roll. Once rolled, wrap the roll in parchment paper or aluminum foil and place it in the fridge for a few hours to firm up well.
When the time is up and the roll has set, take it out of the fridge and spread the rest of the filling on it. Sprinkle coconut flakes on top, covering evenly. For a decorative touch, you can add whole cherries on the surface of the cake. This chocolate and cherry roll not only looks splendid but is also a true delight for the taste buds. Enjoy each slice with your loved ones!
Ingredients: 3 eggs, 80g sugar, 50g dark chocolate, 100g flour, 1 baking powder. For the filling: 250g butter, 200g powdered sugar, 1 vanilla sugar, 250g cottage cheese, 200g cherries, 50g coconut flakes.
