Stuffed Pancakes with Smoked Sausages

 Ingredients: 5 tablespoons of flour, 1 egg, 1 pinch of salt, 10 g yeast, 50 ml oil, sparkling water. Filling: smoked sausages, mustard. Other ingredients: 3 eggs, 500 g sour cream, 300 g cheese, salt, white pepper to taste, butter or Rama margarine.

To prepare these savory pancakes, we start by gathering all the necessary ingredients. We will use 5 tablespoons of flour, one fresh egg, yeast, salt, and sparkling water, all of which form the base of our recipe. In a blender, we add the flour, egg, yeast, and salt. These ingredients will be mixed at maximum speed, and to achieve the desired consistency of the pancake batter, we will gradually add sparkling water. It is important to ensure that the batter is fluid but not too watery. After obtaining a homogeneous mixture, we add the 50 ml of oil to the mixture, which will give the pancakes a softer texture and a richer taste.

Next comes the baking stage. In a non-stick pan, we will bake the pancakes without adding oil, due to the non-stick effect of the pan. From the mentioned quantities, we should obtain about 10 pancakes, each with a suitable diameter for filling. Each pancake will be spread with a thin layer of mustard, and on top, a piece of smoked sausage will be placed, so that it pairs well with the flavors.

After rolling each filled pancake, we will place them in a heat-resistant dish, which we previously greased with butter or margarine to prevent sticking. Now, we turn our attention to the creamy filling. In a bowl, we will beat the 3 eggs with a fork, adding sour cream and mixing well until we obtain a homogeneous composition. Here, it is essential to season with salt and white pepper to taste, to enhance the flavors.

We pour the egg and sour cream mixture over the pancakes placed in the dish, ensuring they are evenly covered. On top, we generously sprinkle grated cheese, which will melt beautifully during baking. Now, we place the dish in the preheated oven, allowing it to bake at medium heat. This is the perfect moment to indulge our senses with the delicious aroma that will spread throughout the kitchen.

Once the mixture sets and browns nicely, we can take the dish out of the oven. These filled pancakes can be proudly served as an appetizer or even as a hearty breakfast. Alongside pickles, the dish becomes truly perfect. Enjoy your meal!
