Ingredients:

For pancakes:
- 200 g wheat flour (you can use whole wheat flour for a healthier option)
- 2 large eggs
- 300 ml milk (or plant-based milk if you prefer a lactose-free option)
- 1 tablespoon sugar (optional, for extra sweetness)
- A pinch of salt
- 1 tablespoon oil (plus extra oil for frying)

For serving:
- 250 g cherry jam (preferably homemade, but you can also use store-bought)

Instructions:

1. Start by preparing the pancake batter. In a large bowl, whisk the eggs with a whisk or fork until frothy. Gradually add the milk, stirring continuously to avoid lumps.

2. Sift the flour into another bowl, adding the sugar and salt. This step helps to homogenize the dry ingredients. Then, incorporate the egg and milk mixture, mixing well until you obtain a smooth batter. If the batter is too thick, you can add a little more milk.

3. Let the batter rest for 10 minutes. This step is essential as it helps the gluten relax, resulting in fluffier pancakes.

4. Heat a non-stick skillet over medium heat and add a little oil. Use a measuring cup (about ¼ cup) to pour the batter into the skillet. Swirl the skillet to evenly distribute the batter.

5. Fry the pancake for 2-3 minutes or until bubbles appear on the surface, then flip it with a spatula and let it cook for another 1-2 minutes on the other side. Continue this process until all the batter is used, adding oil to the skillet as needed.

6. Now that your pancakes are ready, it's time to serve them! Place two to three pancakes on a plate, add a generous spoonful of cherry jam on top, and if desired, you can sprinkle a little powdered sugar for an elegant touch.
