Anca's Strawberry Cake (No Bake)

 Ingredients: 680 g fresh garden strawberries sliced 1 ready-made pie crust (follow instructions) 100 g whole strawberries 10 pitted dates (I used raisins here) soaked in warm water for 10 minutes 2 teaspoons of lemon juice 150 ml vegetable whipped cream (optional) Vegan chocolate for decoration (I did not use) brown sugar to taste, if using greenhouse or frozen fruits (optional) For the crust: 200 g nuts or almonds 175 g dates a pinch of salt oil for greasing the pan (I did not use it because the nuts were oily enough)

To prepare a delicious strawberry tart, the first essential step is forming the crunchy crust. Start by grinding the nuts in a blender or food processor. Pulsing them for a few seconds will give you a fine consistency, ideal for the base. Add the dates and a pinch of salt, continuing to pulse until the mixture becomes a homogeneous, slightly sticky paste. This combination will not only provide texture but also offer a naturally sweet flavor to your dish. Once you have obtained the paste, remove it from the blender and transfer it to a tart pan. Use your fingers to press the mixture into the bottom and sides of the pan, ensuring it is well distributed. Carefully level the edges to achieve a more aesthetic appearance. Then, place the crust in the refrigerator to harden.

While the crust cools, you can prepare the filling. Wash the strawberries and slice them thinly, then arrange them evenly on the bottom of the tart pan over the cooled crust. These slices will add not only a delicious taste but also a vibrant color to your dish. Put the tart back in the refrigerator to chill further.

In another bowl, prepare a puree from the whole strawberries and dates (or raisins) using the blender. Pulse until you achieve a fine and creamy mixture. If you prefer a lighter texture, it’s time to prepare the whipped cream. If using plant-based cream, gradually add the fruit puree while whipping the cream, mixing constantly until you achieve a light and smooth foam. This combination will enrich the tart with an intense strawberry flavor.

After you finish preparing the filling, pour the fruit puree over the tart, smoothing it out to cover all the strawberry slices underneath. You can add another layer of strawberry slices on top for a pleasant appearance and a crunchy texture. For an elegant finish, decorate with pieces of dairy-free chocolate or use a piping bag to add details, according to your personal preferences.

Once you finish decorating, leave the tart in the refrigerator for about an hour so that all the flavors blend perfectly. After it has chilled, cut it with a sharp knife and enjoy each fresh slice. If using greenhouse strawberries, remember to add brown sugar to the fruit puree, adjusting the amount to your taste. This dessert not only looks superb but is also a true delight for the taste buds!
