Cookies with a sweet filling
To prepare these delicious almond and jam cookies, we will start by gathering all the necessary ingredients. In a large bowl, we will add the flour, ground almonds, lemon zest, and sugar. These are mixed well so that the flavors combine evenly. Then, we add the egg yolks and the butter cut into cubes. Using our fingers, we will begin to knead the dough, combining the ingredients until we obtain a homogeneous and easy-to-shape composition. It is important not to knead too much, as this could develop the gluten, which might lead to a texture that is too hard for the cookies.
Once the dough is ready, we will wrap it in cling film and let it rest in the refrigerator for about 30 minutes. This step is essential as it will help the dough firm up, making it easier to roll out and cut. In the meantime, we can prepare the oven, which we will preheat to 150 degrees Celsius.
After the dough has been in the refrigerator, we will take it out and roll it out on a surface dusted with a little flour until it reaches a thickness of about 3 mm. Using a cutter or a glass, we will cut out rounds from the dough. It is important to cut half of them without holes and the other half with holes in the middle, to allow the jam to be visible.
The cut rounds are placed on a baking tray lined with parchment paper, being careful to leave a little space between them. We will bake the cookies for 10 minutes until they become slightly golden around the edges. After taking them out of the oven, we let them cool for a few minutes, then the rounds with holes are dusted with powdered sugar, giving them a sweet and elegant appearance.
To assemble the cookies, we will slightly heat the jam so that it becomes more fluid. Then, we take one round without a hole and spread a generous layer of jam on it, after which we cover it with a round with a hole. These delicious cookies, with a perfect combination of textures and flavors, are now ready to be enjoyed alongside a cup of tea or coffee. Each bite will bring a smile to the faces of loved ones, turning any moment into an unforgettable one.
