To prepare these delicious flavored cookies, we start by gathering all the necessary ingredients. In the first step, we combine in a large bowl the flour with the granulated sugar and brown sugar, mixing them well to ensure they are evenly distributed. Then, we add ground cinnamon, high-quality cocoa powder, baking powder, and grated orange zest, which will give a fresh and fragrant note to the dough. These dry ingredients are essential for achieving fluffy and aromatic cookies.

After mixing the dry ingredients, we add the softened butter, cut into cubes, and the egg. With the help of a spatula or our hands, we begin to knead the mixture until we obtain a homogeneous and easy-to-shape dough. It is important that the butter is at room temperature to incorporate better into the dough. Once the dough is ready, we wrap it in plastic wrap or place it in a plastic bag and leave it in the refrigerator for about 30 minutes. This resting time will help firm up the dough, making it easier to roll out and cut the cookies.

After the dough has cooled, we take it out of the refrigerator and roll it out on a floured surface until we obtain a sheet about 3 mm thick. This is the moment when we can unleash our creativity: we use a star-shaped cutter or any other preferred shape to cut the cookies. It is important to keep the cookies a small distance apart on the baking sheet lined with parchment paper, as they will rise slightly during baking.

We preheat the oven to 180 degrees Celsius, and once it is ready, we place the tray with cookies inside. We bake for about 10 minutes, or until the edges become slightly golden. Once the cookies are done, we let them cool on a rack to prevent them from becoming soggy.

While we wait for the cookies to cool, we can prepare the glaze. We mix powdered sugar with water until we achieve a creamy consistency. If desired, we can add food coloring to create a more cheerful and appealing glaze. Once the cookies have completely cooled, we can start decorating them with the prepared glaze, turning them into a true visual and taste feast. Enjoy them with a cup of tea or coffee and savor every bite!
