To prepare a delicious and impressive rainbow cake, the first step is to ensure that we have all the necessary ingredients at hand. We start by preheating the oven to 180 degrees Celsius. This step is crucial, as a well-heated oven will ensure even baking of the colored layers. In a large bowl, we will mix all the ingredients for the batter, except for the food coloring. We start by adding the whole eggs along with the sugar and mix vigorously until the mixture becomes frothy and fluffy. Then, we add the oil and vanilla essence, continuing to mix to incorporate them well. Finally, we begin to add the flour gradually, mixing with a spatula or with the mixer on low speed to avoid lumps.

Once we have obtained a homogeneous mixture, we divide the batter into seven equal parts, each part being transferred to a separate bowl. Now comes the fun part: we add the food colorings to each bowl. Using a spatula, we mix each portion of batter until we achieve a uniform and vibrant color. Choose your favorite colors or follow the natural order of the rainbow colors for an impressive visual effect.

After coloring the batter, we take the baking trays, greased with a little oil or lined with parchment paper, and start placing a portion of each color, alternating between them. We bake the layers in the preheated oven for about 20 minutes or until they pass the toothpick test. When they are ready, we let the layers cool completely before assembling them.

In the meantime, we prepare the cream. In a bowl, we mix the mascarpone cream with powdered sugar until it becomes creamy and fluffy. Then, we add the melted white chocolate, mixing well to obtain a smooth and delicious cream.

For assembling the rainbow cake, we take each slice of colored layer and apply a generous layer of cream between them. We can choose to arrange the colors in the desired order or to follow the natural sequence of the rainbow, thus creating a captivating visual effect.

Finally, we decorate the cake with whipped cream, which we can color in pastel or vibrant shades, forming a true rainbow on the surface of the cake.
