- salt, to taste
- 280 g fluffy cheese with sour cream
- 2 eggs
- 2 bunches of green onions
- 2 bunches of dill

For decoration:
- 1 egg yolk + 1 tablespoon milk for brushing the tart
- sesame seeds

Necessary tools:
- A tart pan with a diameter of 28 cm
- A plastic wrap
- A clean towel
- A large bowl
- A rolling pin

1. Preparing the dough

We start by activating the yeast, an essential step for obtaining a fluffy dough. In a large bowl, crumble the fresh yeast together with a teaspoon of sugar until it completely dissolves. Add 275 ml of warm milk and a handful of flour, mixing well. Cover the bowl with plastic wrap and leave it in a warm place for about 15-20 minutes, until the starter rises and becomes frothy.

Useful tips:
- Make sure the milk is warm but not hot, to avoid killing the yeast.
- If you don’t have fresh yeast, you can use 10 g of dry yeast, but the activation time will differ.

2. Completing the dough

After the starter has risen, add the remaining warm milk, the rest of the flour (gradually), and the salt. Start mixing with a spoon, then continue kneading the dough with the oil. Knead for about 10 minutes, until the dough becomes elastic and smooth.

Once you have a well-combined dough, take it and toss it a few times in the bowl to aerate it. Shape it into a ball and let it rise, covered with a clean towel, in a warm place for about 1 hour or until it doubles in volume.

3. Preparing the filling

Meanwhile, let’s take care of the filling. Bring 1 liter of water to a boil in a large pot, adding a teaspoon of salt. Wash the lamb's quarters well, then chop it finely. When the water is boiling, add the lamb's quarters and let it boil for 30 seconds. Remove the lamb's quarters from the water and let it drain well to remove excess water.

In a separate bowl, combine the drained lamb's quarters with the fluffy cheese, finely chopped green onions, chopped dill, and eggs. Mix well, adding salt to taste.

4. Assembling the tart

Preheat the oven to 180°C. When the dough has risen, take a third of it and roll it out on a lightly oiled surface. Transfer the dough into a greased tart pan, letting the edges hang over.

Prick the dough here and there with a fork to prevent it from puffing up during baking. Add the lamb's quarters and cheese filling over the dough, spreading it evenly.

Roll out the remaining dough on the work surface, then roll it with a rolling pin and lay it over the filling in the tart. Trim the excess dough from the edges and use it to create small flowers on top of the tart.
