Mackerel with Olives in Red Sauce

 Ingredients: 2 kg mackerel, 500 ml broth, 300 g olives, 10 small onions or 5 medium, 2 heads of garlic, 100 ml vinegar (I had homemade wine vinegar), 10 bay leaves, 1 teaspoon of peppercorns, 150 ml oil, salt, pepper, and vegeta to taste, parsley to taste (I had frozen), water depending on the tray.

To prepare a delicious baked fish recipe, start by choosing a fresh fish, such as carp, catfish, or perch. It should be thoroughly cleaned, removing all internal organs, and the fins and tail should be trimmed to achieve a uniform shape. After cleaning, wash the fish well under a stream of cold water, ensuring that all impurities and slime are completely removed.

Once the fish is clean, place it in a large baking dish, leaving enough space between each fish for even cooking. Season it on both sides, as well as inside, with salt, pepper, and vegeta, adjusting the amounts according to your personal preferences. These seasonings will add a special flavor, enhancing the natural taste of the fish.

For an extra touch of aroma and texture, inside each fish add two green or black olives, depending on your preference, and a piece of onion. The onion should be placed between the olives, so that the flavors combine perfectly during baking. The remaining chopped onion, along with the leftover olives, should be placed among the fish in the dish to enrich the flavor of the preparation.

Don’t forget to add a few cloves of garlic, cut in half, which will give the dish a special taste. They can be strategically placed among the fish, so that their aroma spreads during baking.

After you have prepared all the ingredients, add tomato broth, a little vinegar, and olive oil to the dish, which will enrich the sauce. Add a few bay leaves, whole peppercorns, and complete with water up to the level of the fish.

The dish with fish is placed in the preheated oven at a medium temperature. It is important to monitor the dish, as after about 20-30 minutes, when half of the water has evaporated, turn the fish over. This will allow for even browning and will intensify the aroma.

Let the fish bake until almost all the water has evaporated and the fish have a lightly browned but juicy crust. Finally, serve the dish alongside sides like rice, mashed potatoes, or sautéed vegetables, to complete a delicious and healthy meal. This baked fish recipe will surely become one of your favorites!
