Coconut and Jam Delights (Vegan)
To prepare these delicious jam rolls, we start by gathering all the necessary ingredients for the dough. You will need flour, butter, eggs, sugar, a pinch of salt, and possibly a little milk to achieve a finer texture. In a large bowl, combine the flour with the salt and sugar, then add the butter cut into cubes. Use your fingers to rub the butter into the flour until the mixture resembles almond flour. Add the eggs and, if necessary, a little milk, mixing gently until you obtain a smooth dough.
Once you have finished kneading, form a ball from the dough, wrap it in plastic wrap, and leave it in the fridge for about 30 minutes. This step is essential as it will firm it up and make rolling out easier later. In the meantime, you can prepare your jam. I chose plum jam, but you can use any other preferred jam, such as apricot or raspberry, depending on your taste.
After 30 minutes, take the dough out of the fridge and roll it out on a floured surface, forming square sheets. Use a knife or pastry cutter to cut strips about 5 cm wide. Place a small amount of jam on one edge of each strip, making sure not to put too much to avoid leaks during baking. Carefully roll up the strips of dough, starting from the side with the jam, to form nicely shaped rolls.
Once you have finished rolling all the strips, cut the rolls to the desired size. You might want larger rolls for a more impressive serving or smaller ones for a quick snack. Place the rolls on a baking tray lined with parchment paper. Preheat the oven to a moderate temperature, about 180 degrees Celsius. Bake the rolls for 15-20 minutes or until they turn golden and slightly browned.
After taking them out of the oven, let them cool slightly, then, while they are still warm, dust them with powdered sugar. This last step will give them an elegant appearance and a sweet taste that will add extra flavor. Served warm, these jam rolls are a perfect dessert for any occasion, and their inviting aroma will fill the house with joy. Enjoy!
