Pike is a fish with delicate and very tasty meat, ideal for sophisticated dishes. We start by thoroughly cleaning the pike of its skin, taking care not to damage the meat. Using a sharp knife, we remove the skin from the entire fish, then carefully take the meat off the bones. It is essential to remove all the bones, as they can affect the final texture of the dish. Once we have obtained the clean meat, we pass it through the meat grinder, ensuring we get a fine paste.

In a heated pan, we add a little olive oil and finely chopped onion (or a combination of leek and onion). We let the onion sauté over medium heat, stirring occasionally to prevent burning. After the onion becomes translucent, we add the chopped mushrooms, which will bring additional flavor and texture to the dish. We continue to sauté the mixture, adding salt and pepper to taste. After a few minutes, when the mushrooms are cooked and have released their juices, we take the pan off the heat and let the mixture cool slightly.

Once we have allowed the mixture to cool, we pass it again through the meat grinder to achieve a homogeneous texture. We combine this mixture with the minced pike meat, also adding well-squeezed slices of bread and the eggs, which will bind all the ingredients together. We mix the composition well, ensuring that all the ingredients are homogenized. We season with salt and pepper to personal taste.

The next step is to fill the skin of the pike with this delicious mixture. Using a needle and thread, we will carefully sew the opening so that the filling does not spill out during baking. This detail is crucial to maintain the shape and flavor of the dish. In a baking tray, we pour water, white wine, and vinegar, adding bay leaves and a few sprigs of thyme, which will infuse the dish with exceptional aromas.

We place the stuffed pike in the tray and put it in the preheated oven at a moderate temperature. We let the fish bake for about 25 minutes. Five minutes before it is done, we increase the oven temperature to achieve a golden and appetizing crust on the outside. This dish can be served alongside a fresh vegetable garnish or a green salad to perfectly complete the meal. Enjoy every bite and savor its refined taste!
