To prepare a delicious dessert with an airy texture, we start by preparing the egg whites. They are beaten into a foam in a large bowl using an electric mixer at medium speed. It is essential to ensure that the bowl and mixer blades are completely clean and dry to achieve a consistent foam. Once the egg whites start to become foamy, we gradually add the sugar, continuing to mix until we obtain a firm and glossy meringue. This is the perfect base for our dessert.

In another bowl, we will work with the egg yolks. They are lightly beaten and added to the meringue, mixing with a silicone spatula or a wooden spoon in circular motions from top to bottom, so as not to destroy the air in the egg whites. Then, we add ricotta, which should be lightly mixed beforehand to achieve a homogeneous consistency. Ricotta will provide a special creaminess to the preparation, enriching the final taste.

The next step is to add crushed amaretti by hand, which will bring a crunchy note, as well as an intense flavor. Chocolate, cut into large and small pieces, is added to the mixture, bringing a pleasant contrast between the sweetness of the dessert and the bitterness specific to chocolate. Finally, we sprinkle almonds, which provide an extra texture and a special taste.

The obtained mixture is poured into a ring mold, which is not mandatory but recommended to achieve a uniform appearance. The mold should be lined with baking paper to facilitate the removal of the dessert after baking. We preheat the oven to 180 degrees Celsius and place the mold in the oven, allowing it to bake for about an hour. It is important to check the state of the dessert periodically, and when it becomes golden and a toothpick inserted in the middle comes out clean, we can take it out of the oven.

After it has cooled, we can decorate it with a little melted chocolate or with toasted almond flakes for an even more appealing look. This dessert is perfect for serving on special occasions as well as on ordinary days, bringing joy and flavor to any moment!
