The dough is the base of any successful cake, and for this recipe, you will fall in love with the final texture and taste. Start by pouring the melted and cooled butter over the sifted flour, ensuring that it integrates perfectly into the mixture. Homogenization is an essential step that will guarantee an even dough. Once the butter is incorporated, add the powdered sugar, eggs, and baking powder. Mix the ingredients carefully until you obtain a soft and non-sticky dough.
Here comes an important stage: shape the dough into a ball and wrap it in plastic wrap. This action not only protects the dough but also gives it the necessary time to cool in the fridge for at least 1 hour. After the resting time has passed, take the dough out onto the work surface and divide it into 3 equal parts. Now, using a rolling pin, roll out the 3 sheets of dough, ensuring they are the size of the tray, namely 35x25 cm.
While the dough cools, it is the perfect time to prepare the delicious filling. Peel the apples, remove the core and seeds, then grate them finely. Sauté them in a pan, adding sugar and butter. Let them cook over medium heat, stirring occasionally, until the apples start to caramelize slightly, and the juice they release reduces. Once they have taken on a golden color and an appetizing appearance, incorporate the cinnamon and let the filling cool.
Place the first sheet of dough in the tray lined with baking paper, then add ½ of the apple filling and level it evenly. Cover with the second sheet of dough, add the remaining apples, and finally, place the last sheet on top. Preheat the oven to 180 degrees and bake the cake for about 40 minutes. It is important to watch the baking, as the cake is ready when it turns golden and the delicious aroma fills the kitchen.
After you take the cake out of the oven, let it cool on a rack. This step will help maintain a firm texture.
