Preparing the base is an essential step in making this delicious dessert, which will surely impress everyone who tastes it. Start by dissolving the baking soda in warm tea, choosing a flavored tea, such as fruit tea or green tea, to add a special touch. Once the baking soda is completely dissolved, add all the other ingredients: sugar, eggs, oil, and a pinch of salt. Mix everything well until you achieve a homogeneous and fluffy mixture.
The next step is to gradually incorporate the flour, carefully mixing until the dough reaches the consistency of a loaf batter, meaning it should be thick enough but pour easily. It is important not to overmix, as this will result in a dense base. Prepare the baking tray, making sure to line it with parchment paper so that the base can be easily removed after baking. Place the tray in a preheated oven at medium heat and let it bake for about 40 minutes. The base is ready when it turns golden and passes the toothpick test. After baking, let it cool completely, then trim the edges to achieve an even appearance, cutting it into suitable pieces, which you will then cut in half horizontally.
For the syrup preparation, start by caramelizing the sugar in a saucepan, being careful not to burn it. Once the sugar has taken on a golden color, carefully add the water and let it boil, stirring occasionally, until a syrup forms. Allow it to cool slightly, then add the rum essence, which will give the syrup a distinctive flavor.
The cream is the next element of interest. Caramelize the sugar again and, once it has taken on a golden color, extinguish it with a cup of water. Mix well to completely dissolve the caramel, then add the cornstarch dissolved in half a cup of cold water. It is essential to continuously stir to avoid lumps. Boil the mixture over low heat for about 10 minutes until you achieve a thick and smooth cream. Remove the cream from the heat and incorporate a package of margarine, mixing well to achieve a creamy texture. Cover the cream with plastic wrap to prevent a crust from forming and let it cool.
For assembling the cake, start by soaking each piece of base with a tablespoon of syrup, ensuring it is well soaked but not too soft. Then, add a tablespoon of cream over each piece of base, followed by another layer of soaked base. Repeat the process until you have used all the ingredients. Finally, the cake can be decorated with a little syrup or some ground nuts for an attractive appearance. Let the cake rest for a few hours before serving, to allow the flavors to blend perfectly.
