Ingredients:
- 1 kg kiwi (about 6-8 medium kiwis)
- 500 g sugar
- 1 lemon (juice and grated peel)
- 1 teaspoon vanilla (optional)

Step 1: Preparing the ingredients
Start by washing the kiwis thoroughly under running water. Then, peel the skin off with a sharp knife or a peeler. Cut the kiwis into slices about 1 cm thick. This thickness will allow the fruit to cook evenly and release the juice needed to make the jam.

Step 2: Cooking the fruit
In a large pot, add the kiwi slices and sugar. Mix well to combine the ingredients. Let the mixture sit for about 30 minutes, so the kiwis release their juice. This is an important trick that will help achieve a consistent and rich jam.

Step 3: Adding flavors
After the kiwis have sat with the sugar, add the juice and grated peel of the lemon. The lemon will not only add a note of freshness but will also help preserve the jam. If you want to enhance the flavor, you can also add a teaspoon of vanilla. Mix everything well.

Step 4: Boiling
Place the pot on medium heat and bring the mixture to a boil. Once it starts boiling, reduce the heat and let it simmer on low for 20-30 minutes. Stir occasionally to prevent sticking, and when the jam starts to thicken, you can do a spoon test: drop a few drops on a cold plate; if they remain compact, the jam is ready.

Step 5: Bottling
When the jam has reached the desired consistency, remove it from the heat and let it cool for 10-15 minutes. In the meantime, prepare the jars by sterilizing them. You can do this by boiling or using the oven. Fill the jars with the warm jam, leaving about 1 cm of space at the top, and seal them tightly.

Step 6: Cooling and storing
Let the jars cool completely at room temperature, then store them in a cool, dark place. Kiwi jam can be kept for up to a year, but chances are you will consume it much faster due to its delicious taste!
