Quince Food
Quinces, a fragrant and flavorful fruit, are ideal for creating a delicacy that brings a touch of autumn to the plate. The first step in preparing this recipe is to wash the quinces well. Use water and an abrasive sponge to remove the fine fuzz from their surface. Once the quinces are clean, proceed to cut them. Slice them into suitable pieces, not too large, but also not too small, so they fry evenly. The obtained slices are placed in a pan with hot oil, being careful not to let them fry too long. The goal is for them to become slightly soft and lightly browned on both sides, so they retain their pleasant aroma and texture.
After the quince slices are fried, remove them to a tray lined with a napkin to absorb the excess oil. As soon as they cool slightly, sprinkle them with sugar to add a touch of sweetness. This combination of flavors will become the base of a perfect dish.
Next, pour water into a pot along with the oil in which you fried the quinces. Let it boil, and when the water starts to bubble, take about 700 ml of it and mix it with the flour. Using a whisk, thoroughly homogenize the mixture to avoid lumps. Once you have obtained a smooth paste, pour it back into the pot with boiling water and stir continuously.
Add the quince slices to the mixture of water and flour and let it boil, stirring carefully not to crush the slices. It is important to monitor the consistency of the mixture, which should not become too thick, but rather slightly softer than a pudding, as it will thicken as it cools.
To add extra flavor, caramelize the sugar and quickly pour it over the quince mixture. Also add vanilla sugar, which will enhance the aroma of the dish. Let it boil for a few minutes to blend well, then turn off the heat. This dish will become a savory dessert, perfect to be served warm or at room temperature, with a creamy texture and an unmistakable taste of caramelized quinces.
