Ingredients:
For the sponge:

- 15 ml rum

- 100 g cocoa
- 350 g butter
- 1 packet vanilla sugar
- 60 ml water

- 50 ml rum
- 50 ml water
Preparation:
1. Preparing the sponge:
Start by separating the egg whites from the yolks. Beat the egg whites with a mixer until they form a stiff foam. Gradually add the sugar and continue mixing until it dissolves completely and the mixture becomes shiny and compact.
2. Adding dry ingredients:
Incorporate the yolks, ground nuts, flour, and rum. Gently mix with a spatula or wooden spoon, being careful not to deflate the mixture. It is important to achieve a homogeneous and fluffy composition.
3. Baking the sponge:
Line a rectangular baking tray with parchment paper and pour in the sponge mixture. Bake in a preheated oven at 180 degrees Celsius for 25 minutes or until a toothpick comes out clean. When the toothpick comes out clean, the sponge is ready.
4. Cooling and rolling the sponge:
Once baked, turn the sponge onto a clean kitchen towel, remove the parchment paper, and roll the sponge into a log shape. Let it cool completely.
