Apple and Biscuit Cake (Lenten)

 Ingredients: 60 plain biscuits, 2 kg apples, 500 g sugar, 4 packets of vanilla pudding, 1.2 l water, 150 g raisins, vanilla essence, cinnamon, 100 ml rum (I used almond liqueur)

Apples, a versatile and flavorful ingredient, are the stars of this delicious recipe. The first step is to take care of the apples: we carefully peel them using a sharp knife and cut them into small cubes, about 1-2 cm. These small cubes will cook evenly, releasing their juice and aroma, which will add an intense flavor to the final dish. In a pot, we add enough water to cover the apples and the sugar. We boil over medium heat, stirring occasionally, until the apples become soft but do not turn into puree. It is important to ensure that the texture remains pleasant and slightly crunchy.

Meanwhile, we prepare for the next step: in a separate bowl, we dissolve the 4 packets of pudding in 200 ml of cold water. We mix well to avoid lumps. Once the apples are ready, we pour the pudding mixture into the pot with the apples and stir continuously. We let everything boil for a few minutes until the mixture becomes thick and creamy.

To add a touch of refinement, we add raisins that have been previously soaked in liqueur. They will add a pleasant contrast of sweetness and flavor. We also add a pinch of salt, vanilla essence, and a little cinnamon to enhance the flavors.

Now, let’s take care of the biscuits. We place the biscuits in a removable mold, which we have greased with the remaining liqueur from the raisins. This will help to soak the biscuits and add an extra layer of flavor. We pour a layer of warm cream over the biscuits and continue to alternate the layers: a layer of biscuits followed by a layer of cream, repeating three times, so that the last layer is cream.

Once finished, we let the cake cool at room temperature, then transfer it to the fridge for a few hours. This resting time will allow the biscuits to absorb the cream's flavor and become soft, making it easier to cut the cake. The final result will be a vegan cake that is not only tasty but also very visually appealing, perfect for serving on any occasion. This recipe brings together simple yet special ingredients, transforming them into a refined dessert that will delight any sweet tooth.
