Toci (Potato Pancake)
Ingredients: 5-6 potatoes, onion (green or dry), salt and pepper to taste, 2 eggs, 1-2 tablespoons (grated) of flour, oil for frying
Fried potatoes with onions are a simple yet extremely flavorful delicacy, perfect for a hearty breakfast or a snack between meals. Start by peeling the potatoes, choosing the most suitable ones, preferably varieties that hold up well when fried. Once peeled, grate them using a large grater to obtain thin strands that will fry evenly. This technique will allow the potatoes to brown beautifully, providing a crispy texture on the outside and soft on the inside.
While preparing the potatoes, chop the onion as finely as possible. This will add a special flavor to your dish. You can use white or yellow onion, depending on your preferences. Once you finish chopping the onion, mix it with the grated potatoes, ensuring they combine well. After that, drain the potatoes of excess water, as excess moisture can make the final dish soft and sticky.
In a separate bowl, mix the flour, eggs, salt, and pepper. By doing this, you will obtain a homogeneous batter that will help bind the ingredients. Then add the potato and onion mixture to this bowl and mix everything well. The frying oil is essential for achieving a golden and crispy crust. Heat the oil in a pan over low heat, being careful not to let it smoke.
When the oil is hot enough, take spoonfuls of the potato mixture and place them in the pan. Use the back of the spoon to gently flatten them, giving them the shape of thick pancakes. Fry them until they are golden and crispy on both sides, being careful not to overcrowd the pan to cook evenly. Once ready, remove them to a paper towel to absorb excess oil.
These delicious dishes are served hot, plain, or you can add a splash of sour cream or buttermilk to give them an even more refined taste. The flavors blend perfectly, and each bite will be an explosion of flavor. Enjoy your meal!
