Apple and caramel cream cake – A sweet and fragrant indulgence

Welcome to the wonderful world of desserts! Today we will prepare an apple cake with caramel cream, a recipe that not only delights the taste buds but also fills the soul with joy. This delicacy is inspired by my friend Cristina, who made me discover the perfect combination of sweet-sour apples and velvety caramel cream.

This cake is ideal for both a special occasion and a quiet afternoon, accompanied by a cup of tea or coffee. Let's get started!

Preparation time: 30 minutes
Baking time: 70 minutes
Total time: 1 hour and 40 minutes
Number of servings: 8-10

Ingredients:

For the caramelized apples:
- 4-5 apples (preferably tart, like Granny Smith)
- 8 tablespoons sugar
- 50 g butter
- 1 teaspoon cinnamon

For the caramel cream:
- 5 eggs
- 5 tablespoons sugar
- 500 ml milk

For the sponge cake:
- 4 eggs
- 4 tablespoons sugar
- 4 tablespoons flour
- 1 packet vanilla sugar
- a pinch of salt

Instructions:

1. Caramelizing the sugar: Start by putting the 8 tablespoons of sugar in a saucepan over medium heat. Stir constantly until the sugar melts and turns golden, but be careful not to burn it! Once the sugar is caramelized, remove the saucepan from the heat and let it cool slightly.

2. Preparing the apples: Wash the apples, peel them, and remove the seeds. Cut them into quarters and arrange them evenly over the caramelized sugar. Sprinkle with cinnamon and add the pieces of butter on top. This mixture will provide an irresistible flavor. Place the saucepan in the preheated oven at 180 degrees Celsius for about 20 minutes, until the apples are slightly soft and aromatic.

3. Preparing the caramel cream: In a bowl, beat the eggs with 5 tablespoons of sugar and milk until you get a smooth mixture. After the apples have baked, carefully pour this mixture over the caramelized apples. Put the saucepan back in the oven for another 30 minutes.

4. Preparing the sponge cake: In another bowl, beat the egg whites with a pinch of salt until frothy. Add the sugar and vanilla sugar, continuing to mix until a firm foam forms. Sift in the flour and fold it in with a spatula, gently mixing from the bottom up to keep it airy.

5. Assembling the cake: After the 30 minutes of baking the cream, pour the egg white mixture over the caramel cream and level it with a spatula. Put the cake back in the oven for 20-25 minutes, or until the sponge is golden and passes the toothpick test.

6. Cooling and serving: Let the cake cool in the pan, then carefully turn it out onto a plate. You can decorate it with a dusting of powdered sugar or a few slices of fresh apple for an attractive look. It is just as delicious and simple to serve in its original form!

Useful tips:
- Choosing the apples: Use tart apples for a perfect contrast between sweet and sour. Firmer apples, like Granny Smith, hold up well during baking.
- Caramelized sugar: If you like a stronger caramel note, you can add a few drops of vanilla extract to the caramelized sugar.
- Variations: You can add toasted nuts or hazelnuts for extra texture. Also, for a more exotic flavor, you can replace cinnamon with nutmeg or cardamom.

Frequently asked questions:

1. Can I use other fruits instead of apples?
Yes! Caramelized peaches or plums can be an excellent choice, offering a different but equally delicious taste.

2. What is the best way to store the cake?
I recommend keeping it covered in the refrigerator, where it can stay fresh for 3-4 days.

3. What goes well with this cake?
The apple and caramel cream cake is delicious alongside a scoop of vanilla ice cream or a cup of mint tea.
