Apple and coffee cake (vegan)
Ingredients: 250 ml brewed coffee, weaker 6 tablespoons of sugar 8 tablespoons of flour 3-4 tablespoons of melted margarine 1/2 cup raisins 1 cup apples (peeled) diced 1 packet baking powder, rum essence, vanilla powdered sugar, vanilla sugar
To prepare a delicious apple and raisin cake, we will start by preparing the necessary ingredients. In a medium-sized bowl, we will put 250 g of white flour, 150 g of sugar, 2 tablespoons of instant coffee, and 1 packet of baking powder. Using a spatula or a whisk, we will mix these dry ingredients well until we obtain a uniform mixture without lumps, which should be of an even color.
Then, in the middle of the dry ingredient mixture, we will add 100 g of melted margarine, which should be slightly cooled to not affect the quality of the mixture. We mix again, using a spatula, until the mixture begins to acquire the consistency of a homogeneous and slightly sticky batter. The consistency should be thick enough to support the addition of fruits.
Next, we will prepare the baking tray. Choose a medium-sized baking tray, which we will grease well with oil, ensuring that every corner is covered. After greasing the tray, we will dust it with flour, so the cake does not stick, making it easier to remove after baking.
Now, pour the batter evenly into the tray, and then comes the most delicious step: preparing the apples and raisins! We will peel and chop 2-3 apples into cubes, depending on their size, and add them to the batter. We will also add a good handful of raisins, which will provide a sweet note and a pleasant texture to the cake. Make sure to distribute the apples and raisins evenly in the batter, so each slice has some of these goodies.
The tray will be placed in a preheated oven at 180 degrees Celsius, where the cake will bake for 20-25 minutes. It is important to monitor the baking process, as the time may vary depending on the oven. The cake is ready when it turns golden on the surface and, when tested with a toothpick, it comes out clean.
After the cake has baked, we will let it cool well in the tray for about 15-20 minutes. Subsequently, we will dust it with a mixture of powdered sugar and vanilla sugar to give it an attractive appearance and a subtle aroma.
