Apple and Cranberry Strudel
Ingredients: 15 sheets of pastry, 50 ml oil for greasing the sheets, 2.5 kg of apples, 150 g of cranberries, zest from 2 lemons, zest from 1 orange, 100 g of walnuts, 1 teaspoon of cinnamon, 1/4 teaspoon of cloves, 250 g of brown sugar, 4-5 large tablespoons of granulated sugar, breadcrumbs, 3 tablespoons of oil for sautéing the apples.
To prepare a delicious apple strudel, the first step is to take care of the fresh apples. Carefully wash each apple under a stream of cold water, then peel them with a sharp knife to achieve a fine texture. After you have finished peeling the apples, grate them, making sure to get uniform crumbs. To prevent oxidation and keep the vibrant color of the apples, immediately sprinkle them with lemon juice.
Once you have prepared the apples, measure all the other necessary ingredients: granulated sugar, brown sugar, ground nuts, cinnamon, cloves, cranberries, and oil. Each ingredient plays an essential role in developing the flavors of this dessert. Set the ingredients aside to have them on hand. Now, drain the grated apples well from their juice, so the strudel does not become too wet.
Place the apples in a large pot, adding the three tablespoons of oil. Sauté the apples over medium heat for a few minutes, stirring occasionally, to soften them and enhance their flavor. Once they have softened, add the granulated and brown sugar, mixing well to combine. Add the ground nuts, cinnamon, cloves, and cranberries. Continue to sauté the mixture until the cranberries start to pop and unfold, releasing their sweet-sour aroma. Taste the mixture, and if you want a sweeter dessert, add a little more sugar. Finally, add the lemon and orange peels for an extra flavor boost.
Once the mixture is ready, take the pot off the heat and let the mixture cool. While the apples are cooling, prepare the pastry sheets. Layer five sheets of pastry on top of each other, sprinkling or brushing them with oil between each sheet to give them a crispy appearance in the end. Sprinkle breadcrumbs over the last sheet to absorb excess moisture.
Add 1/3 of the apple mixture along the length of the sheets, then fold the dough like sarma, forming a tightly rolled cylinder. Place each strudel on a baking tray lined with parchment paper. From the ingredients used, you should get three delicious strudels.
Finally, brush each strudel with oil on top and bake them in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit). Let them bake until the sheets become golden and crispy. Once baked, remove the strudels from the oven and place them on a tray to cool. When cooled, dust them with powdered sugar and cut them into slices about two fingers wide. The strudels are served cold, being a perfect choice for a savory and flavorful dessert, ideal for any occasion!
