The pea stew with bacon is a delicious and comforting recipe, perfect for cool days. To start, finely chop a medium onion, which will add flavor and sweetness to the dish. In a skillet, melt some butter flakes over medium heat until they become frothy. Add the chopped onion and let it sweat, stirring occasionally, until it becomes translucent and slightly golden. This will form the flavorful base of the recipe.
Next, add the bacon cut into thin strips or diced sausages, depending on your preference. Let them brown slightly, releasing their flavors into the skillet. Prepare a cup of fresh or frozen peas and incorporate them into the onion and meat mixture. Cover everything with a little vegetable broth, which will add a special taste to the dish. Simmer over medium heat for 10-15 minutes until the peas become tender and the flavors combine nicely.
When the mixture has reduced but not excessively, add a little salt and a tablespoon of flour, stirring quickly with a wooden spoon to avoid lumps. Immediately pour the hot milk over it, continuing to stir vigorously until you achieve a homogeneous mixture. Let it simmer on low heat, stirring occasionally, until the mixture thickens. Once it reaches the desired consistency, set the skillet aside and incorporate the eggs, one at a time, mixing well after each addition. Finally, add the grated Parmesan and freshly ground pepper for an extra flavor boost.
To assemble the dish, prepare a round baking tray with a diameter of 24 cm, which you can line with baking paper or grease with butter. Roll out a sheet of puff pastry in the tray, making sure it rises along the edges of the mold. Pour the pea and bacon mixture over the pastry, leveling it well with a spoon for an even surface. Preheat the oven to 190 degrees Celsius and place the tray inside. Bake for about 45 minutes or until the pastry becomes golden and crispy, and the filling is well cooked.
