Broccoli Cream Soup
Ingredients: 2 tablespoons of butter, 1 chopped onion, 1 stalk of chopped celery, 700 ml of chicken broth (bones, vegetables), 550 g of broccoli (broken into florets), 3 tablespoons of butter, 3 tablespoons of flour (food starch), 500 ml of milk, pepper and salt to taste, I also add garlic to taste.
To create a creamy broccoli soup with a perfect taste, we will start by preparing the necessary ingredients. Make sure you have 500 grams of fresh broccoli, two medium onions, two stalks of celery, 2 tablespoons of butter for the first cooking stage, and 3 tablespoons of butter to make the roux. You will also need about 1 liter of chicken broth, but you can use vegetable broth if you prefer a vegetarian option.
In a large pot, melt the 2 tablespoons of butter over medium heat. Once the butter has melted, add the chopped onion and celery. Cook these vegetables, stirring constantly, until they become soft and fragrant, which will take about 5-7 minutes. Then, add the broccoli, which has been cut into small florets, and continue to stir to combine the flavors. After about 2-3 minutes, pour the chicken broth into the pot. Allow the mixture to simmer over medium heat for 10 minutes, or until the broccoli is tender.
Once the broccoli is cooked, take a blender and puree the mixture until you achieve a smooth and creamy soup. If you prefer a more rustic texture, you can leave some whole pieces of broccoli. Now, in another pot, melt the 3 tablespoons of butter to prepare the roux. Add the flour and stir vigorously, cooking for 1-2 minutes to eliminate the raw flour taste. Gradually start pouring in the milk, stirring continuously to avoid lumps. Cook until the mixture becomes thick and creamy, which will take about 5 minutes.
After the roux is ready, gradually add it to the broccoli soup, stirring well to combine all the ingredients. Season the soup with salt, pepper, and, if desired, a little nutmeg for extra flavor. The soup can be served hot or cold, depending on your preferences. Give it a crunchy look by adding toasted bread croutons or you can opt for a fresh roll, spread with garlic on the inside, to pour the soup into. This recipe will not only delight your taste buds but will also bring a touch of comfort on chilly days, making it ideal to enjoy with family or friends.
