The diplomat cake is a classic dessert that combines the delicacy of cream with the fruity taste of candied fruits and the crunchiness of biscuits. In a special version for Valentine's Day, this cake transforms into a sweet heart, ideal for surprising your loved one.

Ingredients:

- 400 g biscuits (preferably Petit Beurre or vanilla biscuits)
- 500 ml heavy cream (at least 30% fat)
- 400 g natural yogurt (or cream cheese for a richer texture)
- 150 g powdered sugar
- 2 packets of gelatin (about 14 g)
- 200 ml water
- 200 g candied fruits (pineapple, peaches, or berries)
- 1 vanilla essence
- A pinch of salt

For decoration:

- Cocoa powder or grated chocolate
- Fresh fruits (strawberries, raspberries)
- Fresh mint leaves

Instructions:

1. Preparing the gelatin: In a small bowl, add gelatin over 100 ml of cold water and let it hydrate for 5-10 minutes. Then, heat the remaining water (100 ml) in a saucepan, but do not boil it. Add the hydrated gelatin and stir until completely dissolved. Let it cool slightly.

2. The cream: In a large bowl, whip the heavy cream with powdered sugar and vanilla essence until you obtain stiff peaks. This step is essential to ensure a light and airy texture for the cake.

3. Combine the ingredients: In another bowl, mix the yogurt with the dissolved gelatin, then gently fold the whipped cream mixture into the yogurt, being careful not to lose the air you’ve incorporated.

4. Adding the fruits: Cut the candied fruits into small pieces and add them to the cream mixture. They will add extra flavor and texture to your dessert.

5. Assembling the cake: Place a layer of biscuits in a heart-shaped cake pan, covering the bottom well. Pour half of the cream mixture, then add another layer of biscuits and the remaining cream. Top with a final layer of biscuits.

6. Chilling: Cover the pan with plastic wrap and refrigerate the cake for at least 4 hours, ideally overnight. This step allows the gelatin to set, resulting in a firm and easy-to-cut cake.

7. Decorating: Once the cake has chilled and set, turn it out onto a serving platter. You can decorate it with cocoa powder or grated chocolate, fresh fruits, and mint leaves, giving it a festive and attractive appearance.

Serving suggestion: Cut the cake into slices and serve it with chocolate sauce or vanilla ice cream alongside for a contrast of textures and flavors.

Possible variations: You can experiment with different types of biscuits or fruits, adding nuts or chocolate to the mixture for extra flavor. You can also replace the yogurt with mascarpone for a richer texture and taste.

This heart-shaped diplomat cake will not only impress with its appearance but will also bring a delightful taste that will make any occasion more special. Try it and enjoy a sweet moment with your loved ones!

Cut the sponge cake (made at home as a simple sponge or bought). Place plastic wrap in a heart-shaped pan and arrange a layer of sponge cake slices along the edges and bottom of the pan. Whip the cream. Use 3 boxes of 200 ml each of sour cream for whipping, meaning it just needs to be whipped, it has no sugar. Make the meringue from the 3 egg whites and 140 grams of sugar. On low heat, prepare the cream from the 3 egg yolks and 110 grams of sugar. Soak 40 grams of gelatin in water to swell, add it to the cream, and heat a little more to dissolve well. Meanwhile, place a layer of drained canned pineapple on the bottom. Quickly mix the egg yolk cream with the meringue and whipped cream so that the gelatin does not solidify. On top of the cream, place a layer of sliced apricots in syrup lengthwise. Add more sponge cake slices on top, cover well with plastic wrap, and refrigerate with something on top to press it down a bit. The sponge cake does not need to be soaked because it is cut thin and is very fluffy; it gets moisture from the juice that the fruits release when pressed. After a few hours, remove it from the mold and turn it onto a rack to decorate. Cover it with whipped cream. It can be decorated with melted chocolate placed in a paper cone made for baking.
