Greek-style chicken soup

 Ingredients: Chicken breast, Onion, Carrot, Pepper, Celery, Greens: dill and parsley, Lemon, 250 g Sour cream, 2 egg yolks, 3 tablespoons of rice, 1 chicken cube, Salt and pepper

To prepare a delicious chicken soup, we start by choosing a fresh chicken, preferably from a farm, to ensure that the flavor will be exceptional. Once we have cut the chicken into pieces, we place it in a large pot with cold water, adding a teaspoon of salt. It is important to let the chicken simmer on low heat so that the meat becomes tender and juicy.

In the meantime, we prepare the vegetables. Onion, carrot, bell pepper, and celery are ideal for a flavorful soup. We cut these vegetables into small cubes or thin slices, as preferred. In a frying pan, we heat 2 tablespoons of oil and add the chopped vegetables. We sauté them over medium heat, stirring occasionally, until they become translucent and begin to soften. This process will intensify their flavors, giving the soup a rich taste.

When the vegetables are ready, we add them to the chicken that is boiling in the pot. It is time to add the chicken cube to the water, which will further enrich the broth with flavor. We let everything simmer on low heat, covering the pot, to allow the aroma to develop. The soup should simmer slowly so that all the ingredients combine perfectly.

After the chicken and vegetables are cooked, we take care of the sour cream. In a bowl, we whisk the egg yolk well with the sour cream, creating a smooth and creamy mixture. It is important to take a ladle or two from the warm soup and gradually add it to the sour cream mixture, stirring continuously to temper the egg. This step is essential to prevent the sour cream from curdling.

Once we have a uniform mixture, we carefully pour it into the soup, ensuring that it is not boiling at that moment; otherwise, the risk of it curdling increases. We let the soup come to a gentle boil, stirring lightly to integrate the sour cream.

Finally, it is time to add a splash of acidity to balance the flavor. We squeeze the juice of a lemon and add it to the soup, thus adjusting the taste. Don’t forget to add salt and pepper to taste. Before serving, we sprinkle fresh chopped herbs, such as parsley or lovage, which will add color and extra flavor. The chicken soup is now ready to be enjoyed, full of nutrients and with a comforting taste, perfect for any meal!
