The butter is rubbed with sugar until it becomes a homogeneous paste, appreciated for its creamy texture and sweet taste. This step is essential, as the butter will perfectly integrate into the rest of the ingredients, providing an extra flavor. Once we have obtained a fine composition, we add almond powder, known for its intense aroma, which will enrich the dish. Then, we incorporate the two eggs, which will add juiciness, and vanilla or rum essence, to bring a touch of exotic flavor. It is important to mix all the ingredients very well so that we obtain a uniform mixture, which will become the delicious filling of the pie.

Next, we prepare to roll out the first sheet of pastry. We use a tray or the back of a tray, on which we place parchment paper to prevent sticking. With the help of a brush, we grease the edge of the pastry sheet with egg yolk, leaving a space of about 2-3 cm to allow for sealing. In the center of the sheet, we place the filling composition, which we spread evenly, ensuring that each corner is well covered. Here we can add a figurine, symbolically, which will bring an element of surprise when serving.

The next step consists of rolling out the second sheet of pastry, which we carefully place over the filling. With our fingers, we press on the edges to ensure that the two sheets stick well, thus avoiding filling leaks during baking. With a knife, I lightly score the edge to allow for expansion and make a small hole in the middle, which will let air escape during baking.

To give the pie a beautiful appearance, we make superficial stripes with the knife on top, being careful not to cut through the sheet. These stripes will create a beautiful pattern on the surface of the pie. Finally, we brush the pie with the remaining egg yolk mixed with a little milk, to give it a golden and shiny color after baking. The pie is placed in the preheated oven and baked for 20 minutes, until it becomes golden brown and appetizing. The flavors will intertwine, and the final result will be a delicious pie, perfect for enjoying with loved ones.
