Loboda Soup
Ingredients: approximately 700 g of lamb's quarters (depending on how you want it, thicker or thinner) 4.5 l of water a glass of rice 200 ml of winter vegetables or tomato paste 2 eggs 2 carrots 1 medium onion 120 ml of oil 5 tablespoons of vinegar (the vinegar is added according to taste) salt, seasoning, to taste dill to taste
Loboda with rice is a traditional Romanian recipe, full of flavors and health. We start by washing the loboda well, making sure to remove any impurities. We cut it into thin strips so that it cooks evenly and retains its crunchy texture. In a pot, we bring water to a boil, and when it starts boiling, we add the chopped loboda along with the peeled and diced carrot. The carrot will add a sweet note to the soup, balancing the taste.
After the water has started to boil, we add the washed rice, stirring gently to prevent sticking. The rice will perfectly combine the flavors of the vegetables, providing a consistent supply of carbohydrates. Meanwhile, in a separate pan, we take care of the onion. We chop it finely and sauté it in a little oil, adding the vegetables or tomato paste. This will create a flavorful base that will enrich the soup.
Once the rice has started to boil, we add the onion and vegetable mixture to the pot with the soup. We stir well to combine the ingredients and allow the flavors to integrate. The soup will take on a vibrant color and an inviting aroma. After the rice is cooked, we focus on preparing the egg and vinegar mixture. In a bowl, we crack the eggs and beat them well, gradually adding the vinegar. Then, we start incorporating the broth from the soup, stirring continuously with a fork until the bowl is full.
The next step is to carefully pour the egg mixture into the soup, stirring gently to avoid lumps. This technique will give the soup a creamy texture and a delicious taste. We let the soup simmer on low heat for another 5 minutes, so the flavors blend well. Finally, we adjust the taste by adding salt and seasoning according to everyone’s preferences.
Once you turn off the heat, we finely chop the fresh dill and add it to the soup, giving it a note of freshness. The dill will perfectly complement the flavor of the loboda and the vegetables, turning this soup into a truly tasty dish. Serve the soup hot, perhaps alongside a slice of fresh bread, and enjoy a healthy and comforting dish, perfect for any meal!
