Preparation time: 30 minutes
Baking time: 15 minutes
Total time: 2 hours (including dough resting time)
Number of servings: 12 mini tarts
Ingredients:
For the tart dough:
- 100 grams cold butter
- 150 grams flour
- 50 grams sugar
- 1 vanilla essence
- 1 egg
For the vanilla cream:
- 1 package of vanilla pudding powder
- 500 ml milk
- 3 tablespoons sugar
For the fruit:
- 3-4 medium ripe pears
- Lemon juice (to prevent oxidation)
- Red jelly (can be store-bought or homemade)
Preparation:
1. Preparing the dough:
Start by mixing the cold butter, cut into cubes, with the flour, sugar, egg, and vanilla essence. Use a food processor to combine the ingredients for a few seconds until you get a homogeneous mixture. It is essential that the butter and egg are cold to achieve the perfect dough texture.
Tip: If you don’t have a food processor, you can use a hand mixer or even your hands, but make sure not to over-knead the dough.
2. Resting the dough:
After obtaining the dough, shape it into a ball, wrap it in plastic wrap, and place it in the refrigerator for at least 1 hour. This step is important for the dough to become easy to handle and not deform during baking.
Suggestion: You can prepare the dough a day in advance and keep it in the refrigerator or freezer, where it can be stored for up to a month.
3. Baking the tarts:
Preheat the oven to 180°C. After the dough has rested, roll it out on a floured surface, then cut circles to fit the mini tart pans. Grease the pans with a little butter to prevent sticking. Place the dough in the pans, make a few holes with a fork in each tart to allow steam to escape, then bake for 15 minutes.
Frequently asked question: Why is it important to make holes in the dough? The holes help prevent air bubbles from forming, which can distort the shape of the tart.
4. Preparing the vanilla cream:
While the tarts are baking, follow the instructions on the vanilla pudding package. Generally, you will mix the pudding powder with the milk and sugar in a saucepan, then bring the mixture to a boil, stirring continuously until it thickens. Once the cream is ready, let it cool.
5. Assembling the tarts:
After the tarts have cooled slightly, remove them from the pans and place them on a cooling rack. Fill each tart with the vanilla cream, being careful not to overfill, as you will be adding the fruit.
6. Preparing the pears:
Peel the pears and slice them thinly. Drizzle them with a few drops of lemon juice to prevent oxidation and keep their fresh color.
7. Arranging the fruit:
Arrange the pear slices on each tart, arranging them nicely for an appealing look. For an elegant finish, you can apply a thin layer of red jelly over the fruit using a cooking brush.
Suggestion: If you prefer, you can also use other fruits such as strawberries, blueberries, or peaches, depending on the season and preferences.
8. Serving:
These mini fruit tarts are excellent served cold, perhaps with a scoop of vanilla ice cream on the side or with a cup of aromatic tea. You can prepare a chocolate sauce for an extra flavor boost.
Nutritional benefits:
These pear tarts are not only tasty but also full of nutrients. Pears are rich in fiber, vitamins C and K, while the vanilla cream adds a touch of calcium from the milk.
Calories:
One mini tart contains approximately 150-200 calories, depending on the ingredients used and the amount of jelly added.
Possible variations:
You can experiment with different flavors in the vanilla cream by adding cinnamon or nutmeg. You can also replace pears with other seasonal fruits or dried fruits for an explosion of flavors.

Ingredients: For the tart dough we need: 100 grams of butter, 150 grams of flour, 50 grams of sugar, a pinch of vanilla, and 1 egg. For the cream, I used the simple version, which is store-bought vanilla pudding, but you can try a tart cream. We need: pudding powder, 500 ml of milk, 3 tablespoons of sugar. And of course, we need fruits, and here you can use any kind of fruit; I had pears at home and made these wonderful tarts with pears. To enhance the tarts a bit, I added red jelly on top of the pears at the end, also store-bought... it's simply made from jelly powder, fruit compote, and some sugar.
