To prepare the famous simple fasting pancakes, we start by gathering the necessary ingredients and getting ready for a simple yet flavorful culinary process. In a large pot, we add the flour, then add salt, sugar, and baking soda. These ingredients are mixed well with a spatula or a whisk to ensure they are perfectly combined. The aroma of vanilla is next on the list; by adding it now, we will achieve a sweet and pleasant note in the mixture. The next step is to start incorporating the sparkling water, little by little, constantly mixing to avoid the formation of lumps. It is essential to adjust the amount of sparkling water based on the type of flour used, as some flours absorb more liquid than others.
When we have obtained a mixture that is soft yet thick, it is time to add the oil. This will give the pancakes a fine texture and a pleasant taste. Mix well to integrate the oil, and then gradually add sparkling water, continuing to mix until the mixture becomes similar to liquid sour cream, meaning it is fluid enough to pour into the pan.
Now it is time to prepare the pan. We heat it over medium heat and grease it with a little oil to prevent the pancakes from sticking. We take a ladle of batter and pour it into the pan, rotating it with circular motions to allow the batter to completely cover the bottom of the pan. We let the pancake cook on one side until it becomes nicely browned, after which we flip it with a spatula to cook on the opposite side. Once it reaches a golden hue, we transfer it to a plate and repeat the process with the remaining batter.
After finishing with the simple fasting pancakes, I decided to add a personal touch to the remaining batter. This time, I incorporated grated lemon zest and ground nuts, mixed well, and if the batter seemed too thick, I added a little more sparkling water until I achieved the desired consistency. We proceed the same way as before, cooking these aromatic pancakes gives them a distinct flavor. In the end, I enjoyed them with a delicious quince jelly, combining the sweetness of the fruit with the aroma of lemon and the crunchiness of the nuts. This culinary experience transformed a simple pancake recipe into a true festival of flavors.
