Dried Bean Soup with Quince
Ingredients: 300 g beans, 1 large onion, 1 large carrot, 1 red bell pepper, 2 medium tomatoes, 4-5 tablespoons of oil, 1 large quince, salt, 6-7 peppercorns, lovage, tarragon.
To prepare a delicious bean soup, start by carefully selecting the beans. Make sure they are healthy, without spots or impurities. Once you have chosen the beans, wash them well under a stream of cold water to remove any impurities. Transfer the beans to a large bowl and cover them with water, letting them soak overnight. This process not only improves the texture of the beans but also helps reduce the cooking time.
The next day, drain the beans and wash them again. Place them in a large pot with cold water and bring to a boil. When the water starts to boil, change the water for another clean, hot one. This technique helps remove some impurities and enhances the final taste of the soup. Continue boiling over medium heat, stirring occasionally.
Meanwhile, prepare the rest of the ingredients. Peel the onion and carrot, then chop them into small cubes. These vegetables will add flavor and sweetness to your soup. When the beans are cooked about 3/4 of the way, add the onion and carrot to the pot. Let them boil together for a few minutes until the onion becomes translucent and the carrot softens.
After a few boils, add the diced bell pepper, peppercorns, and the peeled and chopped tomato. These ingredients will bring an extra layer of flavor and freshness to the soup. Adjust the salt to taste, being careful not to overdo it, as the quince that will follow will also contribute to the flavor.
The quince, also cut into cubes and unpeeled, adds a distinctive note, a surprising mix of sweet and tart. Once you have added the quince, let the soup boil for a few more minutes. Then, turn off the heat and sprinkle the finely chopped lovage and tarragon over the soup. These fresh herbs will provide an inviting aroma and a vibrant color to your dish.
