Bread and Pretzels with Sesame
To obtain the most delicious and aromatic pretzels, we will start by preparing the dough, an essential step to ensure a fluffy texture and a perfect taste. In a large bowl, we combine the basic ingredients: flour, warm water, fresh or dry yeast, sugar, and salt. It is important to mix the dry ingredients well before adding the liquid, to ensure that the yeast activates properly. Once we have obtained a homogeneous dough, we knead it vigorously for about 10 minutes, until it becomes elastic and smooth. This process helps develop the gluten, which will contribute to a better texture of the pretzels.
After we finish kneading, we cover the bowl with a clean towel and let the dough rise in a warm place, away from drafts, for about an hour or until it doubles in volume. The rising of the dough is a magical moment, and patience will be rewarded with fluffy and delicious pretzels.
Once the dough has risen, we turn it out onto a lightly floured work surface and divide it into equal portions, depending on the desired size of the pretzels. Each piece of dough will be shaped into a pretzel, taking care not to make them too thick or too thin. It is important to ensure that the edges stick well to prevent them from coming apart during boiling.
In a large pot, we bring water to a boil and, carefully, introduce the pretzels into the boiling water, leaving them for just a few seconds, enough to blanch them and give them a crispy outer layer. This technique is essential for achieving that perfect crust on the pretzels. After removing them from the water, we place them on a baking tray greased with olive oil, making sure they do not touch each other.
To give them an appetizing appearance, we sprinkle sesame seeds on top, which will not only add a special flavor but also contribute to the final crunchiness of the pretzels. We place the tray with pretzels in the preheated oven at 200 degrees Celsius and let them bake for 15-20 minutes, until they become golden and crunchy.
Then, when the pretzels are ready, we take them out of the oven and let them cool slightly on a rack. Serve them warm, alongside a cup of tea or coffee, and you will discover that each bite is an explosion of flavor and texture.
