Spring rolls, also known as 'spring rolls', are a crispy and flavorful delicacy, perfect to be served as an appetizer or snack. These delicious rolls are filled with fresh vegetables and meat, providing a perfect contrast between the crispy texture of the pastry and the juicy filling. In this recipe, we will explore step by step how to achieve the perfect spring rolls, bringing you some useful tips to help you shine in the kitchen.

Preparation time: 30 minutes
Cooking time: 10 minutes
Total time: 40 minutes
Number of servings: 4

Ingredients:

*For the filling:*
- 1/2 small white cabbage
- 2 medium carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 2-3 cloves of garlic
- 3-4 slices of ham or 300 g minced chicken
- Green onion
- 4-5 assorted mushrooms
- 3-4 tablespoons soy sauce
- Salt and pepper to taste
- 1 package of thin pastry sheets
- 300 ml oil for frying

*Sweet and sour sauce:*
- 3 tablespoons rice vinegar or wine
- 3 tablespoons raw sugar
- 2 tablespoons tomato sauce
- 2 tablespoons soy sauce
- Juice of 2 oranges
- 1 tablespoon sesame oil or other oil of choice
- 1 teaspoon cornstarch
- 5-6 tablespoons water

Preparation:

1. Preparing the filling: Start by washing and cutting all the vegetables. Slice the cabbage into thin strips, cut the carrots lengthwise, dice the peppers, and slice the mushrooms. If using chicken, make sure it is finely minced. In a wok pan, add 2-3 tablespoons of oil and heat it over medium heat.

2. Cooking the meat: Add the chicken or ham to the pan and cook until golden and well-cooked, about 5-7 minutes. This step is essential for a flavorful filling. You can add a little salt and pepper to enhance the taste.

3. Adding the vegetables: Once the meat is cooked, add the carrots, cabbage, green onion, garlic, and mushrooms to the pan. Mix well and cook on high heat for about a minute. Then, add the soy sauce, which will add a special flavor to the filling. Continue to cook until the liquid has evaporated.

4. Preparing the pastry sheets: Unroll the package of pastry sheets and cut them into approximately equal squares (15x15 cm is a suitable size). Make sure the pastry sheets are covered with a damp towel to prevent them from drying out.

5. Filling the rolls: Place about 2 teaspoons of the prepared filling in the center of each pastry sheet. Fold the side corners diagonally over the sheet, then bring the bottom up to the folded corners and roll carefully to form a tight package. This step may require a little practice, but don't get discouraged! You will perfect your technique over time.

6. Frying the rolls: In a deep pan, heat the oil (about 300 ml) over high heat. Fry the spring rolls until golden and crispy, about 2-3 minutes on each side. Be careful, as they fry quickly. After frying, remove them and let them drain on a paper towel to remove excess oil.

7. Preparing the sweet and sour sauce: In a small bowl, mix all the ingredients for the sauce: vinegar, raw sugar, tomato sauce, soy sauce, orange juice, sesame oil, and cornstarch. Put the mixture on low heat and let it simmer, stirring constantly, until it thickens. This sauce will add a delicious contrast to your rolls.

Serving suggestions: Serve the spring rolls warm, alongside the sweet and sour sauce. You can garnish them with a few lime slices or fresh cilantro leaves for a touch of freshness.

Tips and variations: If you want a vegetarian option, you can replace the meat with tofu or additional vegetables, such as zucchini or eggplant. You can also add spices like grated ginger or chili for an extra kick of flavor. Spring rolls are extremely versatile, so feel free to experiment with your favorite ingredients.

Nutritional benefits: These spring rolls are rich in vegetables, offering you plenty of vitamins and minerals. They can also be a healthier option, especially if you choose to bake them instead of frying. One spring roll has about 150-200 calories, depending on the filling and cooking method.

Frequently asked questions:
- Can I use frozen pastry sheets? Yes, make sure to thaw them beforehand and cover them to prevent drying out.
- How can I store leftover rolls? You can store them in the fridge for 1-2 days, and to reheat them, I recommend baking them in the oven to keep them crispy.
