To prepare a delight of greengage muffins, we start by carefully preparing all the necessary ingredients. In a large bowl, we add the softened butter, which should be at room temperature, and beat it with a mixer at medium speed until it becomes creamy and fluffy. Then, we add granulated sugar, salt, and vanilla sugar, continuing to mix everything until the mixture becomes homogeneous and slightly frothy. It is important to ensure that all the ingredients are well integrated, and the flavors blend harmoniously.

The next step is to incorporate the eggs, one at a time, mixing well after each, for about two minutes. This will help create a fine and airy texture. In another bowl, we sift the flour together with the baking powder, essential for obtaining fluffy muffins. We also add the ground nuts, which will bring extra flavor and texture. We mix the dry ingredients well to ensure that the baking powder is evenly distributed, then gradually add them to the wet mixture, alternating with the milk. We mix with a spatula or a wooden spoon, being careful not to overwork the dough.

While we deal with the dough, we prepare the muffin trays. We line them with paper liners, which will help us remove them more easily after baking. We preheat the oven to 175 degrees Celsius, so that it is ready when we fill the molds.

Now we turn our attention to the greengages. We wash them well, drain them, and then cut them in half, being careful to remove the pits. The fresh aroma of the greengages will enrich the sweetness of the muffins. We fill the muffin molds with the batter up to about 1 cm below the top edge, then bury half a greengage in each mold, ensuring that these delicious fruits will be well integrated into the batter.

After all the molds are prepared, we place them in the preheated oven and let the muffins bake for 20-25 minutes, or until they become golden and baked. It is important not to open the oven door in the first 15 minutes of baking, to avoid affecting the rising process. When they are ready, we take them out of the oven and let them cool slightly in the tray, then we can transfer them to a cooling rack. These greengage muffins will be perfect for a delicious breakfast or as a sweet snack during the day. Enjoy them with a cup of tea or coffee and savor their flavors!
