Mocha Cake
To prepare a delicious and savory cake, we start with making the layers. In a large bowl, we beat the egg whites until frothy, gradually adding sugar until we achieve a firm and shiny mixture. It is essential to ensure that the egg whites are at room temperature to obtain optimal foam. Separately, in another bowl, we beat the egg yolks with vanilla sugar until they become a light-colored, fluffy cream. Then, carefully, we fold the sifted flour into the yolk mixture, gently mixing with a spatula to avoid losing air from the mixture.
After obtaining a homogeneous mixture, we pour it into a rectangular baking pan lined with parchment paper and place it in the preheated oven on low heat, letting it bake for about 25-30 minutes or until the layer passes the toothpick test. Once baked, we take the layer out of the oven and let it cool completely on a wire rack. After it has cooled, we cut it into three equal layers, thus preparing the base for our delicious cake.
For the filling cream, we place the eggs, sugar, and water in a heat-resistant container and boil them in a water bath, stirring constantly, until the mixture reaches the thread test. Then, we add the cocoa and continue to stir to obtain a uniform cream. After the cream has cooled, we use a mixer to whip it, gradually adding the margarine until it becomes smooth and homogeneous. Finally, we flavor the cream with rum essence, which will give the cake a special note.
To assemble the cake, each layer is generously soaked with coffee syrup, and then filled with the prepared cream, ensuring that the cream is evenly spread between layers. After assembling, the cake is chilled for a few hours; ideally, it should sit overnight to firm up well.
Regarding the decoration cream, we melt the chocolate in the microwave, being careful not to burn it. Once melted, we add the whipped cream and honey, mixing well to obtain a smooth cream. This is spread evenly over the entire surface of the cake, giving it a shiny and appetizing appearance. Finally, we decorate the cake according to personal preferences, using grated chocolate, fruits, or various edible ornaments, thus transforming a simple cake into a pastry masterpiece.
