On a special Saturday, I had the pleasure of celebrating my favorite uncle's birthday. I decided to surprise him with a chocolate cake that, although it may seem less masculine in appearance, was certainly an explosion of flavors that delighted him. This chocolate cake recipe is perfect for any occasion, especially during the holidays when we want to bring a smile to the faces of our loved ones.
The history of chocolate cake is fascinating, with deep roots in culinary tradition, where chocolate has been used not only as an ingredient but also as a symbol of prosperity and love. Whether you are preparing it for an anniversary, a celebration, or simply to indulge yourself, this cake will surely become a family favorite.
Ingredients
For the sponge:
- 9 eggs
- 18 tablespoons sugar
- 18 tablespoons flour
- 6 tablespoons cocoa
- 1 1/2 teaspoons baking powder
- Vanilla essence
- 9 tablespoons water
For the cream:
- 100 ml milk
- 2 egg yolks
- 50 g sugar
- 1 packet gelatin
- 200 g dark chocolate (or milk chocolate)
- 50 ml oil
- 400 ml liquid cream
- 100 g mascarpone (optional)
For the syrup:
- 5 tablespoons sugar
- 1 cup water
- Vanilla essence
For decoration:
- 100 g chocolate
- 30 ml oil
- 170 g chopped and roasted nuts and hazelnuts
Preparation
1. Preparing the Sponge: Start by separating the egg whites from the yolks. Beat the egg whites with 3 tablespoons of water until stiff peaks form. Gradually add 6 tablespoons of sugar, continuing to mix until you achieve a glossy meringue. Incorporate the 3 yolks and mix well.
2. Add the Dry Ingredients: Sift together the flour, cocoa, and baking powder, then fold them into the egg mixture. Finally, add the vanilla essence.
3. Bake the Sponges: Pour the mixture into a baking tray lined with parchment paper and bake in a preheated oven at 180°C for about 20 minutes. Repeat the process for the other two sponges.
4. Preparing the Cream: In a double boiler, combine the yolks, sugar, and milk, stirring continuously until the cream thickens. In another bowl, melt the chocolate with the oil and let it cool.
5. Gelatin: Hydrate the gelatin in 2 tablespoons of cold water, then heat the mixture in the microwave for 30 seconds. Add the melted gelatin to the yolk cream, followed by the cooled chocolate.
6. Whip the Cream: Whip the liquid cream until it becomes firm. Fold the chocolate cream with the whipped cream and mascarpone (if you choose to use it).
7. Prepare the Syrup: In a saucepan, caramelize 2 tablespoons of sugar, add the water and the remaining sugar, vanilla, and let it boil.
8. Assembling the Cake: On a platter, place the first sponge layer. Soak it well, add half of the chocolate cream, followed by the second sponge, which should also be soaked. Add the remaining cream and finally place the last sponge on top.
9. Glazing: Melt 100 g of chocolate with 30 ml of oil and glaze the cake. Decorate the edges with roasted nuts and hazelnuts.
10. Cooling: Let the cake cool overnight. This step is essential to allow the flavors to meld and to achieve a perfect texture.
Serving and Variations
The chocolate cake can be served plain or with a scoop of vanilla ice cream for a delicious contrast. You can also experiment with different chocolate flavors by adding, for example, a splash of coffee or rum to the chocolate cream.
Nutritional Benefits
The chocolate cake is not only delicious but also packed with antioxidants due to dark chocolate. Eggs and cream provide healthy fats and proteins. Of course, it's important to consume in moderation, as a serving can contain about 400-500 calories.
