Preparation: We begin the culinary adventure by preparing a generous bowl, in which the flour, an essential ingredient that will give structure to our cake, will be sifted. Sifted flour not only removes any impurities but also encourages aeration, resulting in a fluffier dough. Next, we add the baking powder, which will act as a leavening agent, ensuring that the cake rises beautifully in the oven. We then introduce the sugar, an ingredient that will bring the necessary sweetness and contribute to the caramelization of the cake.

We continue with the eggs, which will bind all the ingredients together, giving them a velvety texture. Limoncello, an Italian liqueur, adds a refined and aromatic note, while freshly grated lemon zest will enhance the citrus flavor. We mix all these ingredients well to ensure that the flavors combine harmoniously.

The next step is to add the soft butter, which will transform the dough into a creamy and rich one. It is essential that the butter is at room temperature so that it integrates perfectly into the composition. After obtaining a homogeneous dough, we cover it with plastic wrap and let it chill in the refrigerator for about 30 minutes. This step is crucial as it will help the dough firm up, making it easier to form the balls.

Meanwhile, we prepare the baking tray, lining it with parchment paper to ensure that the cookies will release easily after baking. After 30 minutes, we take the dough out of the refrigerator and start forming balls the size of a walnut. Each ball will be rolled in granulated sugar, which will give them a sweet and crispy crust. We place the balls on the tray, leaving enough space between them to allow for expansion during baking.

We preheat the oven to 170 degrees Celsius and place the tray inside, letting the cookies bake for about 10 minutes. Just enough time for them to become golden and fluffy. Once they are ready, we let them cool slightly, then serve them alongside a chilled shot of limoncello. This dessert is perfect for bringing a touch of freshness to warm days, being a delicious combination of citrus flavors that will surely delight any cake lover.
