To prepare a delicious and refreshing dessert, we start by making a thin base, ideal for supporting raspberry or strawberry cream. The first step is to separate the egg whites from the yolks. In a deep bowl, we beat the yolks with sugar using an electric mixer until the mixture becomes creamy and a deep yellow. This process will incorporate air, giving the base a fluffy texture. We then gradually add one tablespoon of the five of water and baking soda, continuously mixing to obtain a homogeneous mixture.

In another bowl, we use the mixer to beat the egg whites until they form stiff peaks, gradually adding 25 grams of sugar until we obtain a glossy and firm meringue. This will add volume to our bases. Once we have the meringue, we return to the yolk mixture. We slowly add the sifted flour, mixing with a spatula to avoid losing air from the egg whites. It is essential to do this step gently to maintain the fluffy texture of the base.

Once the ingredients are well integrated, we pour the mixture into a baking tray lined with parchment paper greased with a little oil or butter. It is important to ensure that the base is evenly distributed in the tray so that it bakes evenly. We place the tray in the preheated oven at a medium temperature, allowing the base to bake for about 20-25 minutes, or until it is lightly browned and passes the toothpick test.

After the base has cooled completely, we turn our attention to the delicious cream. We mix lemon juice with condensed milk and raspberry or strawberry puree, depending on preferences. We ensure a homogeneous and flavorful mixture. Then, we add the whipped cream, mixing carefully to preserve the volume. This cream will be smooth and full of fruity flavors.

We carefully pour the cream over the cooled base, ensuring that we cover the entire surface evenly. It is recommended to let the dessert chill in the refrigerator, ideally overnight, to allow the flavors to blend perfectly. When we are ready to serve, we can add a fruit syrup or fresh fruit on top, such as raspberries or strawberries, for an attractive appearance and an even more intense taste. Enjoy your meal!
