Salmon with Oranges
To obtain a delicious salmon, we start with an essential step: quickly washing the salmon fillet under a stream of cold water. This not only removes impurities but also helps preserve the nutritional properties of the fish. After washing, lightly salt it and let it rest for a few minutes, allowing the salt to penetrate well into the flesh.
Meanwhile, we prepare the flavors that will give our dish a special taste. Finely grate the zest of an orange, being careful not to include the white part, which is bitter. Then, squeeze the juice of two oranges, keeping the third for decoration. This mixture will give the salmon a fresh and vibrant note, perfect for highlighting its flavor.
Now, we move on to the onion. Chop the onion very finely, or, if you prefer, you can quickly chop it in a mixer to achieve a fine texture. Mix the chopped onion with the juice and zest of the oranges, adding mustard seeds and a pinch of salt. This sauce will be the key element that will envelop the salmon in delicious flavors.
Place the salmon fillet in a deep dish and pour the sauce over it, ensuring it is evenly covered. Let it sit in the refrigerator for about 30 minutes, so the flavors can penetrate well into the flesh.
After the salmon has marinated, prepare for cooking. Pour some of the orange sauce into a baking dish, place the salmon fillet on top, and add the remaining sauce. Sprinkle white pepper on top for an extra flavor boost and to highlight the dish's taste. Place the dish in a preheated oven at 180 degrees Celsius and let it bake for 30 minutes. The salmon will become tender and juicy, while the sauce will caramelize slightly, giving it an appetizing appearance.
While the salmon is in the oven, you can prepare the side dish. I have prepared two surprise packets with champignon mushrooms. Place three whole mushrooms on each sheet of aluminum foil, sprinkling them with salt, pepper, and a drizzle of olive oil. Close the foil tightly and place the packets in the oven alongside the salmon. The mushrooms will become tender and absorb the delicious flavors.
To complete the culinary experience, serve the dish alongside a glass of white wine, which will highlight the fresh flavors of the salmon and orange. Enjoy every bite!
