Raspberry, Orange and White Wine Jam

 Ingredients: 400 g raspberries, 1 orange, 400 ml semi-dry white wine, 500 g sugar, 20 g pectin, 3 tablespoons lemon juice or a sachet of citric acid (lemon salt), vanilla essence

To prepare a raspberry and peach jam that delights the taste buds and brings a touch of summer to every spoonful, we will follow a series of steps that, although they seem simple, require attention and patience to achieve an excellent result. We start with the raspberries, an essential ingredient that will give our jam an unmistakable flavor.

First, we carefully wash 500 grams of fresh raspberries, ensuring that no impurities remain. After the raspberries have drained well, we put them in a large pot and boil them for 15 minutes. This process will help release the juices from the fruit, turning them into a delicious paste. After boiling, we pass the raspberries through a fine sieve to obtain a smooth puree, removing the seeds so that every spoonful of jam will be silky and pleasant to the taste.

Meanwhile, we take care of the peaches. We will use 500 grams of ripe peaches, which we carefully peel and cut into small cubes. The peaches will add a sweet flavor and a pleasant texture to our jam. In a separate pot, we bring the peach cubes to a boil together with 250 grams of sugar. We let everything boil for 15 minutes, stirring occasionally to prevent sticking.

After 15 minutes, we add the raspberry puree, the remaining 250 grams of sugar, vanilla essence, the juice of one fresh lemon, 10 grams of pectin, and 100 ml of white wine. We mix everything well and let it boil for another 4 minutes, during which the mixture will thicken and acquire the perfect consistency for jam.

To ensure optimal preservation, we prepare the jars. They must be clean, washed with hot water and detergent, then sterilized in the oven at 100 degrees Celsius for 20 minutes. Once the jam is ready, we pour it hot into the sterilized jars, filling them up to 1 cm from the top. We seal the jars tightly and place them in a blanket to cool gradually, a process that will contribute to the perfect sealing of the jam.

After 24 hours, the jam will be ready to be enjoyed. It can be used as a filling for cakes, on toast, or simply on a slice of fresh bread. The delicious flavors of raspberry and peach will combine perfectly, bringing joy to every moment of the day. This recipe will not only enrich your jars but will fill your home with an inviting aroma, evoking pleasant memories associated with summer.
