To prepare these delicious pancakes, we start by melting the butter in a small container, being careful not to let it burn. We mix everything with a whisk or spatula until we obtain a smooth and thin batter, which should have a consistency similar to that of sour cream.

After mixing well, we cover the bowl with plastic wrap or a lid and let it cool for about 30 minutes. This step is crucial as it helps develop the gluten in the flour, resulting in a fluffier texture. After the resting time has passed, we add the 50 ml of beer to the batter. The beer gives the pancakes a lighter texture and a subtle taste that makes a difference. We mix again, ensuring that the beer is well incorporated.

We start heating the oil in a large pan over medium heat. It is important for the oil to be well heated before adding the batter to achieve a nice and crispy crust. Using a ladle, we pour the batter into the pan, being careful to tilt the pan so that the batter spreads evenly over the entire surface. We cook the pancake on one side for about a minute on low heat, then flip it with a spatula and let it cook on the other side for another 30 seconds.

It is important to adjust the cooking time according to our stove; each utensil has its specifications. Once the pancakes are ready, we carefully flip them onto a plate and repeat the process with the remaining batter. From the mentioned quantities, we should obtain about 6 pancakes, depending on the size of the pan used.

For filling, we have a variety of delicious options: we can use sweet cheese mixed with a little sugar and vanilla or fruit jam, whether it is raspberry, strawberry, or peach.
