Meatball soup (III)

 Ingredients: -350 g minced meat mix -1 onion -fresh parsley -4 carrots -2 parsley roots -2 teaspoons sweet paprika -salt, pepper -1 small celery -red pepper paste -1 cup rice -sour cream for serving -1 raw egg

We start preparing this delicious soup with a flavorful base that will give this dish a special taste. The first step is to finely chop the onion and put it in a pan with a little oil, letting it sauté over medium heat. It is important to stir it occasionally to prevent burning. Once the onion becomes golden and translucent, we add a large spoonful of pickled peppers, an ingredient that adds extra flavor. If you don't have pickled peppers, it's not a problem; the soup will still be just as tasty. We mix well to combine the flavors, and then we add a teaspoon of paprika. When the aroma of the paprika is felt, we extinguish everything with a large cup of water, being careful not to let it burn.

After adding the water, the other vegetables come in: carrot, root parsley, and celery. These will bring a special texture and flavor to the soup. We fill the pot with water so that all the ingredients are covered and let it boil for 20 minutes. After this interval, we remove the vegetables and let them cool. I prefer to take them out because it's easier for me to chop them into small cubes later. The carrot and parsley will be finely chopped, while the celery, which has only added a background flavor, will be discarded.

Now, we turn our attention to the meat mixture. In a bowl, we combine the minced meat with finely chopped parsley, a raw egg, a cup of rice, salt, and pepper. We mix all the ingredients well until we get a homogeneous mixture. From this mixture, we form small balls, which will be added to our pot with vegetables. We let everything boil for 30 minutes under the lid so that the flavors blend perfectly.

In the end, we don't forget to taste the soup and, if necessary, add salt and pepper to taste. It is important to mention that I do not put sour cream in the pot, as everyone can add it to their liking. This detail makes each serving personalized. The soup is finished with finely chopped parsley, which brings freshness, and the cooled, boiled, and diced vegetables. This soup is perfect for a family meal, full of taste and flavors, that will delight everyone.
